I've lived on the coast most of my life in and near the salmon capital of the world lol, I love my salmon!
You'll never go wrong with 350!. As for cooking fish or any kind of meat, you will hear all those per pound or per inch numbers and drive yourself crazy, lol!. Weight/time ratio cooking times are highly inaccurate, as there are those variables together, thickness and weight, and each fish is different!. For meat same thing, marbling and other factors affect the cooking time of the actual piece!.
The sad thing is for someone who is not an intuitive cook (using the 5 senses to monitor when something is done) or doesn't have a meat thermometer, the above answer is not really helpful!. The thing is giving an answer like 5 minutes per pound or 10 minutes per inch or whatever anyone gives you, is not accurate!. So I'd rather give you the one that is most accurate, even if it isn't a definitive answer!. It just takes practice!.
When I'm baking fish in foil, I oil it, it, lay it flat, drizzle it with lemon juice, herbs, that will vary depending on what kind of dinner I'm making or mood, or whatever, inside and out)!. Seal it up airtight, and bake it until it's done!. A 4 pound salmon may take 40 minutes!. Or not!. It depends how thick it is!.
If you cook a smaller/thinner salmon, you are safer at a higher temperature (the golden rule in the kitchen, the smaller the meat, the higher the heat), but a larger/thicker salmon at 400 or 450 will dry out /overcook on the outside by the time the inside had a chance to cook!. And well overcooking any fish is sacrilege!.
There you go!. Sorry that's not a cut and dried answer, but I could not in good conscience give you an exact time per pound or per inch, knowing that those numbers would not help you!.
Good luck and happy salmon baking!Www@FoodAQ@Com
