Cooking rice in a wok?!


Question: Cooking rice in a wok!?
bought a used electric wok for 2 bucks today at a garage sell and thought it was a great deal!
BUT i've never used one and was wondering what type of rice i buy to make fried rice!?!?!?

i've read it should be cold before cooking and that's all i know!. do i buy a bag of dried rice and refrigerate it, cook some rice and chill it!.!.!.!.i'm completely lost!

Cook the rice first, then chill it!. Spread it out on a cookie sheet to cool and then put it in the fridge for at least 2 hours or until it's completely chilled!. Leftover rice or rice that's been in the fridge for a day or so works best since it's not moist like rice that has just been cooked!. If you use fresh cooked rice, your fried rice will be soggy and sticky!.

You need to use cooked rice!. Gently boil your rice in plenty of water for 15 minutes, then drain, wash off starch and put in fridge for min 1 hour (overnight is better)!.
I use egg in my fried rice so I beat one or 2 eggs (depends on how much rice I have) and fry it in the hot wok with a little oil until it makes an "omelet"!. Remove and chop it up!. Add a little more oil!.
Finely chop an onion and lightly fry it in the wok!.
Put a tablespoon of oil in your heated wok, add rice slowly so as not to lower the temperature of your wok!. Toss all the time while you add your other ingredients (ham or cooked bacon, peas, bean shoots, chopped cooked meat - anything)!. Lastly add soy sauce to taste and toss toss toss!. You want day old precooked rice ideally, but you can cook it before doing your fry up!.
The main thing to do is to get it as dry as possible!. Cook it to the texture you want, then drain!.

Some people will dry it spread out on a tray, in a low oven!.
Getting it dry as possible is the trick, and I mean, moisture wise, not the actual rice!.Www@FoodAQ@Com

cook the rice, and cool completely!. that way the liquid doesn't cook the rice more making it mushy!. when the rice is cool, add cooking oil to the wok and the ingredients you want to put in the rice first!. then add the rice and stir fry until hot!. it's best if you use a short-grain rice, and cook the rice a day in advance!. that's what i do!. good luck!Www@FoodAQ@Com

NO!.!.!.!.you need cold cooked rice for fried rice!!! First you cook the rice as you normally would, let it cool and refrigerate several hours, then begin the frying with your other ingredients!.!.!.garlic, onion, shrimp or pork, or whatever!.Www@FoodAQ@Com

that rice needs to be cooked before going into the wok!. a bit unusual to cook rice from scratch in a wok especially if you don't have a lid!.Www@FoodAQ@Com

Just cook any cheap old white rice!. Once cooked, rinse under cold water!. Let it drain well and start stir frying it with your other ingred!.Www@FoodAQ@Com
