Parmigiano-Reggiano is the king of Italian hard cheeses!. It has many immitators labeled "Parmesan" but they pale in comparison!. To be avoided at ALL costs is the green box of parmesan which has all the flavor of the cardboard it's packaged in!.
The cheese's history goes back to the dark ages when Cistertian monks almost single-handedly cleared the Po valley to allow for grazing herds of cows!. The monks taught the local farmers the survival skill of preserving excess milk production as cheese!.
Yes, it's more expensive and yes, it's worth it unless the flavor will be totally lost in what you are cooking!.
Okay, okay!.!.!. Having said all that, I am embarrassed to admit that my wife (who is half Italian and otherwise a superb cook) likes to sprinkle on the little packets of parmesan that come with our pizza!. She can be SO picky about other things!.!.!. well, we shouldn't get into that!.Www@FoodAQ@Com

Ken S is completely wrong it is simply the extended name of Parmesan Cheese derived from the region from where it is traditionally made!. Never is it nor has it been two cheeses combined!. It's quality and sharpness will vary with how long the cheese has been matured for!. The longer the better!.Www@FoodAQ@Com

Reggiano Parmigiano is Italian cheese which is the only true parmesan cheese!. That stuff on grocery shelves is shelf stable imitation though it is made from milk too!.Www@FoodAQ@Com
