Need healthy cake reciepe for daughters 1st Bday; any suggestions?!
Her party is in a little less then a month and I need a reciepe for a healthy cake alternative!. Something that has an icing that she can smoosh into her face and look cute; but isnt filled with fake chemicals and sugar!. We dont allow her sugar or fake preservatives ect!. (at least not for another year or two)!. I will be having about 30 adults and 10 kids ages 6months-7 years attending!. I will be getting 2 cakes from the grocery store for everyone else!. Along with jello fish bowls I have for the kids if they want them!. I will not allow Kam to eat the regular cake because it is basically pure sugar crap!. So in order to appease everyones deisre to see her make a mess I need a good alrenative!. I dont want some crazy hippy vegan soy crap!. Just something not filled with refined sugar and processed white flour!. Any ideas!?Www@FoodAQ@Com

soy is not hippy vegan crap!. Funny how you think it's fine to insult anyone that might eat soy but think it's OK to announce your own dietary needs (no refined sugar or flour)!. Cake is not supposed to be healthy per se!.!.!.why not make a organic carrot cake with raw organic sugar!.!.or is that too hippy for you!?Www@FoodAQ@Com

Cake is not supposed to be healthy, that's why people don't eat it all the time!. Soy is not vegan crap, it is really good for you!. Why don't you just let her have cake this one time, it is her birthday and one small piece of cake won't kill her!. I am willing to bet that a cake with no refined sugar or flour wouldn't taste very good either!.Www@FoodAQ@Com
CARROT CAKE WITH COCONUT CREAM CHEESE
ICING
The Cake:
2 cups sugar
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
2 cups grated carrots
1-1/3 cups vegetable oil
4 eggs, slighly beaten
1 cup chopped and toasted walnuts or pecans
1 - 20 ounce can crushed pineapple, drained
1 teaspoon vanilla extract
1 teaspoon lemon extract
1/2 teaspoon almond extract
Preheat the oven to 350°F!.
Grease and flour two bread loaf pans!. Combine dry ingredients in a large mixing bowl!. Add carrots, oil and eggs!. Beat well, until mixed!. Add other ingredients and stir!. Put into baking pans!.
Bake for 1 hour or until done!. Completely cool cakes before frosting!.
The Frosting:
1/2 cup butter, softened
1 - 8 ounce cream cheese, softened
1 - 16 ounce box powdered sugar, sifted
2 teaspoons vanilla extract
1 cup chopped and toasted walnuts or pecans
1 cup flaked coconut
Combine butter and cream cheese; cream until light and fluffy!. Add sugar and vanilla, mixing well!. Stir in pecans and coconut!. Spread on each cake!. Store cakes in the refrigerator!.
Note: This cake freezes beautifully!. Place on foil covered baking sheet!. Freeze until hard!. Remove from freezer and wrap in plastic wrap and then in foil!. Return to freezer!. Unwrap totally and then defrost cake!.Www@FoodAQ@Com
