Pina Colada Cake (worth it!)
Get a white cake mix (or two if you want to make a layered cake)!.
Instead of adding water, add pinapple juice (same quanitity), add a teaspoon of rum extract and coconut extract, don't use the egg yolks and beat the egg whites before folding into cake mixture, bake as normal
Icing - cream cheese, cup of icing sugar, half cup of cream of coconut (you may need to add a little of one of these ingredients to make it taste as you want it too), teaspoon coconut extract
If you make the cake into layers, put some icing inbetween the layers and then drizzle with extra coconut cream!. Once the cake is set, cover the whole cake with icing, and decorate
You can decorate using toasted coconut (you can buy shredded coconut (sweetened or nonsweetened) from the store, put it on a baking sheet spread out, put it in at 350 and watch it turning it every once in a while to make sure it doesn't burn, it tastes sooo good!. You can buy a large coconut and put large pieces of coconut on it, macadamia nuts, pinapple slices, whatever you want
It is really really good!. I made it for a work meeting, and even the people who hated coconut loved itWww@FoodAQ@Com
