Casserole help?!


Question: Casserole help!?
i'm cooking casserole for my mum (she always complains i never cook)

so far ive added: browned off sausages, 2 sliced onions, half red green and yellow peppers, mushrooms, green beans, spices, casserole mix (yeah it's colemans, sue me!) and some tinned tomatoes,

my question is:

i dont have enough potatoes to make mash for two people,

any ideas what i can do with the potatoes or have you got any other suggestions i can team the casserole with!?Www@FoodAQ@Com

Garlic Mashed Potatoes & Beef Bake
1 lb!. ground beef
1 can Campbell's(R) Cream of Mushroom with Roasted Garlic Soup
1 tbsp!. Worcestershire sauce
1 bag (16 oz!.) frozen vegetable combination (broccoli, cauliflower, carrots), thawed
3 cups hot mashed potatoes

COOK beef in skillet until browned!. Pour off fat!.

MIX beef, 1/2 can soup, Worcestershire and vegetables in 2-qt!. shallow baking dish!.

STIR remaining soup into potatoes and spoon over beef mixture!.

BAKE at 400°F!. for 20 min!. or until hot!. Serves 4!.Www@FoodAQ@Com

cut them up into fairly small bits ( depending on the size of pots, but maybe quarter them) and then boil them, chuck in the casserole when they still need abit of cooking, i mean, stick a knife in, but you know they need another 15 minutes boiling or so, then chuck them in the casserole, they'll get all the flavours of the casserole, and have it on a low heat for maybe 30-45 mins!.!.!. and you dont need that many really, not like mash!.!.!. you always need loads!Www@FoodAQ@Com

I always make casserole with egg noodles - boil them for 6 minutes, drain and add them right into the casserole dish -
they'll bake in the oven!.

I usually make a ham casserole - 1 cup diced ham, egg noodles, 2 cans mushroom soup, a little fried onion, and 1/2 cup mayonnaise - bake at 350 for 1/2 hour, and that's it!Www@FoodAQ@Com

Grate the potatoes with a coarse cheese grater and add them too the casserole!. also add a bit of browned bacon, some garlic powder, some hot sauce and a wee bit of water if the casserole is not moist!.

Or make some Colcannon to stretch the potatoes!.

Right, par boil the pots!. then put em in the pot or they won't cook!.

By the way don't put sausages in a casserole they are horrid (unless from your local butcher), and cook dumplins they are great - for dumpins dont over mix and they will be huge)!.

I am a total amateur but I would use rice or pasta!.
Casseroles are great - almost anything will do!.
