Bumpy Cookies!?!


Question: Bumpy Cookies!!?
I love baking cookies and have succeeded at making beautiful cakes, muffins, cupcakes, bread, pastries, etc!. But cookies are my enemies!. Very few of my cookies ever turn out smooth, always bumpy!. Why is that!? How can I make them smoother!?Www@FoodAQ@Com

I bake cookies every year at Christmas to give away as gifts and these are some of my favorite cookie recipes!. Some tips: I always use butter never margarine or Crisco/shortening for the best taste; for chewier cookies that require brown sugar, up the amount of brown sugar by 1/4 cup; cookies will be chewier if baked for the least amount of time; have all ingredients at room temperature including eggs and butter before creaming and mixing!. For drop cookies, I prefer to use a #20 cookie scoop instead of a teaspoon, the cookies bake more evenly and look nicer!.

EDIT: In answer to your question about fat(s): The answerer above me, when they say fat(s), they are referring to the butter or shortening used in the making of the cookies - don't feel bad, not everyone knows 'cooking speak'!.

Try creaming the sugars with the fat longer!.
Only stir flour till its mixed!.
You are creaming the sugar into the fat aren't you!.

Every cookie recipe I have (100s) contains some kind of fat!.
Corn oil , margarine , butter , sour cream ,peanut butter!.
I'd say that is why your cookies aren't turning out right!.Www@FoodAQ@Com

I think all cookies do this!. If your spoon-fulls are dropped you will have uneven tops and edges!. That is one of the charming things about cookies!.
If you are doing cut out cookies you may have a problem with uneven heating in the oven, turn the cookie sheet a 1/2 turn half way through the baking!. Do not over fill the oven so you have good air circulation!.Www@FoodAQ@Com

"fat" is a generic term for any oil, butter, shortening, margarine or lard you might use in the cookies!. It's one three-letter word that stand for all of them , so it's easier to say and type!

Drop cookies are rarely flat!. For really flat cookies, you need a good rolled cookie recipe w/ little or no leavening in it, and lots of flour!. They will bake up in exactly the shape you cut them out and place them on the cookie sheet!.Www@FoodAQ@Com

when you are mixing the ingrediants, mix up all the wet ingrediants 1st!. then SLOWLY sprinkle on the dry ones and mix well!. hope this helped!Www@FoodAQ@Com
