Sugar Pie's Blueberry-Stuffed French Toast Casserole

Nonstick cooking spray
9 eggs, beaten
2 cups milk
? cup melted butter
? cup maple syrup
12 cups cubed stale French bread
1 (8 oz!.) package cream cheese, cut into small cubes
2 cups fresh or frozen blueberries
Blueberry Syrup or maple syrup (optional)

Preheat oven to 350oF!. Grease a 3-quart rectangular baking dish with cooking spray; set aside!.

In a smaller bowl combine eggs, milk, butter, and the ? cup maple syrup!. Whisk until combined!. Place bread cubes in large bowl; add cream cheese and the blueberries!. Slowly pour the egg mixture over blueberry-and-bread mixture; gently fold mixture to evenly moisten the bread!. Pour into greased casserole dish!.

Bake 40 to 45 minutes or until a knife inserted near the center comes out clean!. If necessary, cover with foil the last 10 minutes of baking to prevent overbrowning!. Let stand 10 minutes before serving!. Cut in squares!. Serve with Blueberry Syrup or additional maple syrup, if desired!. Makes 12 servings!.

Farmer's Brunch Casserole

3 cups shredded hash browns or sliced potatoes
3/4 cup (3 oz!.) shredded Monterrey Jack Cheese
1 cup diced fully cooked ham
? cup sliced green onions with tops
4 beaten eggs

Optional ingredients: Sliced fresh mushrooms or diced green bellpeppers

Preheat oven to 350°!. Spray 2 quart baking dish / pie plate with nonstick spray!. Arrange
potatoes evenly in the bottom of the baking dish!. Sprinkle with cheese, ham and green onions!.

Combine milk, eggs and pepper!. Pour over potato mixture!. Bake uncovered for 40-45 minutes until center appears set!. Let stand for 5 min!. before slicing!.

Breakfast Egg Cups

1 can of 5 Grands biscuits
5 eggs
1/4 cup milk
1/4 cup shredded cheddar cheese
1/2 (4oz) can chopped green chiles, optional
4 sausage patties, fried and crumbled
5 slices bacon, fried crisp and crumbled
3 slices chopped ham
Sprinkle each garlic powder, salt, & pepper
Garnishes: salsa, shredded cheese, sausage gravy

Split each biscuit in half horizontally and press flat into a circle!. Fit biscuits on bottom and up sides of 10 muffin cups!. Combine eggs, milk, seasonings, and shredded cheese in bowl!. Pour into buttered skillet and scramble until just beginning to set, still should be somewhat soupy!. Spoon into biscuit cups and bake at 350oF for about 12-15 minutes until biscuits are golden!. Original recipe yield: 8 servings





INGREDIENTS
6 baking potatoes
1 pound ground pork sausage
2 tablespoons butter
1 onion, sliced
2 teaspoons seasoning salt
1 cup shredded Cheddar cheese
12 eggs, lightly beaten
salt and pepper to taste

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!. Lightly grease a medium baking dish!.
Prick potatoes with a fork, place on a medium baking sheet, and bake 30 minutes, or until tender but firm!. Remove from heat, cool, peel, and cube!.
Cook and stir sausage in a medium saucepan over medium heat until evenly browned; drain!.
Melt butter in a large saucepan over medium heat!. Stir potatoes and onion into saucepan, and cook until potatoes are browned and onion is tender, about 10 minutes!. Sprinkle with seasoning salt!. Place potato mixture in the prepared baking dish!. Cover with sausage!. Sprinkle with cheese, top with eggs, and season with salt and pepper!.
Bake 30 minutes in the preheated oven, or until eggs are fully cooked!.

Hint: Layer ingredients in a baking dish the night before, then cover and refrigerate!. In the morning pop the casserole into the oven about an hour before serving!. Makes 6 servings ( make 2 for 12 people)

Ingredients

2 1/2 cups frozen shredded hash brown potatoes, or Tater Tots
3/4 cups shredded Monterey Jack with (optional) jalapeno peppers
1 pkg!. Knorr's Leek Soup mix
1 cup chopped fully cooked ham or Canadian bacon (optional)
1/4 cup sliced green onion
4 beaten eggs or 1 cup egg substitute
1 - 12 oz!. can evaporated milk (or 1 ? cup evaporated skim milk)
1/4 tsp!. pepper
1/8 tsp!. salt
1/2 lb!. asparagus or mushrooms, washed and cut into 1" pieces
4 to 5 tomatoes, coarsely chopped

Spray a 2-quart square baking dish with Pam!. Arrange potatoes evenly in the bottom of the dish!. Sprinkle cheese, ham, green onion over all!. In a mixing bowl combine eggs, milk, pepper, salt, soup mix!. Pour over mixture in baking dish!. Sprinkle with Crazy Jane's salt and/or Mrs!. Dash!. Cover with foil or plastic wrap and refrigerate overnight!. ext morning bake uncovered at 350 for 1/2 hour!. Remove from oven; add asparagus or mushrooms and tomatoes!. BACON SOUR_CREAM QUICHE (make 2)
Melt 1/2 cup of butter in large pan on medium!.
Remove & add 1 cup all-purpose flour,
1/2 cup frozen shredded hash-browns,
1/2 cup grated medium cheddar cheese,
1/2 tsp Worcestershire sauce, 1/2 tsp salt,
& 1/4 tsp onion powder!.
Stir well, press firmly into 9" pie plate to form a crust!.
Cook 8 bacon slices, diced, until crisp, drain on paper towel!.
Scatter bacon over crust, sprinkle 1 cup Swiss cheese over,
scatter 1/3 cup chopped green onion over that!.
Beat 3 large eggs, 1 1/2 cups sour cream, 1 tbsp flour,
1/2 tsp salt, 1/8 tsp pepper, 1/8 tsp ground nutmeg,
in medium bowl until smooth!. Pour over onion mixture!.
Bake on bottom rack in 375F oven for 40 minutes!.
Test doneness with clean knife in centre!.

I like to make brunches on the weekends!.
The menu I like is as follows:
Fresh sliced rolls and bagels with butter on the table
chopped egg salad or scrambled eggs in a mound on a plate
pre-sliced unsalted LOX with the sliced bagels and cream cheese
lettuce, sliced tomatoes, sliced cucumber platter
fresh fruit bowl consisting of cubed cantelope, strawberries, blueberries, rasberries
Yogurt for the for the fruit
Orange juice in a pitcher
Coffee & tea and milk or cream and sugar

Bum On A Raft! You take a peice of bread and (fold it then cut out a circle hole in the center)!. Then, you put it in a sauce pan with bread, crack an egg over top of it so the yolk is directly in the hole that you made, and when it is done, it looks perfect as the yolk sits in the hole and the rest of the egg rests on the "raft", which is actually the toast!. It's creative, cute and tasty! Serve with bacon, sausage, pork roll, or anything else you prefer!Www@FoodAQ@Com

HASH BROWN CASSEROLE

2 lbs!. frozen shredded hash brown potatoes (thawed)
1 bunch green onions, chopped
sweet pepper chopped (red – green – yellow – orange – or a mixture of all)
1 lb!. Sausage, cooked until pink disappears, crumbled
1 cup ham cubes
4 slices crisp bacon, crumbled
1 small can sliced mushrooms
1 small can sliced black olives
2 – 8oz!. packages of shredded cheese
? cup milk
12 eggs beaten
Tabasco (optional)
sour cream & salsa (optional)

Grease a 9 x 13 baking pan, wipe excess with paper towel!.
Spread potatoes on bottom (cand be lightly browned in a skillet first if desired)
Sprinkle sausage over potatoes…then
Peppers…
Mushrooms…
Ham!.!.
Onions (reserve about ? cup)
Mix eggs & milk together……!.I added about 2 TBLS!. Tabasco…more to your taste… pour slowly over all!.
Cover with shredded cheese…!.then sprinkle over all
Remaining onions…
Olives…
Bacon…
Cover and refrigerate overnight!.
Uncover and bake at 375 degrees for 35 – 45 minutes…until browned and cheese is melted!.
Serve with sour cream and/or salsa!.

STICKY BUNS

INGREDIENTS:

1 -1 1/2 cups chopped nuts (I used walnuts)
24 frozen dinner rolls (I used Rhodes)
1 pkg!. butterscotch pudding (I used sugar-free instant)
1 stick butter (melted)
1 cup brown sugar (firmly packed)
2 tbls!. cinnamon

INSTRUCTIONS:

Lightly butter (wipe with paper towel) a 9" x 13"baking pan (I
used a glass Lasagna dish)
Spread nuts evenly over bottom of pan, place rolls on top!. (4
across and 6 the long ways)
Sprinkle the `dry' pudding mix over rolls & nuts!.
Combine the melted butter, brown sugar & cinnamon and drizzle
over buns!.
Place waxed paper (that has been lightly sprayed with cooking
spray & excess wiped away with paper towel) over top!. Let rise
overnight!.
Bake at 350 degrees for 30 minutes, until browned!.
(Second time I made these, I doubled sugar, butter, & cinnamon!)

my family does a kind of skillet dish where we layer hashbrowns, sausage, bacon, cheese, and top it off with eggs in a big skillet that will feed everyone!. You could also try swedish pancakes, french toast, muffins!.!.!.

You could do a fritata!. It is basically a huge omelet with what ever ingredients you would normally like in an omelet in the fritata (you'll need a big non stick skillet) and bake it in the oven until set!. Serve with some rustic bread and rolls and jams and you are set!Www@FoodAQ@Com

well it all depends what these people are used to eating!?!.!. try potato soup or brocolli soup!. and/or a barbecure ribs!. with a salad!.!. or something not too heavy try giving them fruit salad and/or sliced fruit with honey on top!.!. good luck!.!.Www@FoodAQ@Com
