Question: Sausages, what's your favourite recipe, I have heaps of them!!?
I've got Italian Pork, South African Boerworst, and Tomato & Cheese Chippolatas, any ideas that don't involve BBQ!.Www@FoodAQ@Com

With the Pork sausage I would make a simple red sauce and combine with penne pasta!.

Penne with Italian Pork Sausage

Fry up your pork sausage with 1 onion and clove of garlic chopped!. Then add 1 can of crushed tomatoes, 1 tablespoon fresh chopped thyme, salt and pepper to taste!. Simmer for five minutes and then add a hand full of fresh chopped basil!. Serve on cooked penne and fresh grated Parmesan!.Www@FoodAQ@Com

Milanese Style Penne

18 oz Penne Rigate, boiled to desired doneness
12 oz Sweet Italian Sausage, skinned
2? cups Heavy Cream
3/8 tsp Saffron
? cup Imported Parmesan Cheese
Salt and pepper to taste

Peel sausage and gently brown in a pre-heated pan!.

Drain fat and add the cream and continue to cook over low heat for 4 minutes!.

Add the saffron and reduce the sauce to the desired consistency!.

Lightly chop the sausage and add back to the sauce!.

As soon as the pasta is done, add the pasta to the sauce and season with the Parmesan cheese, salt and freshly crushed black pepper!.

Thin the sauce with the pasta water when needed!.

Sausage Squares

1 lb!. pork sausage (no casing)
1 small onion, chopped
1 green bellpepper, chopped
cayenne pepper to taste
oregano to taste
1 (8 oz) block cream cheese
1 pkg!. crescent rolls

Fry sausage with onion and pepper; drain!. Stir in cayenne pepper and oregano to taste!. Add cream cheese!. Roll out crescent rolls to 1/4 inch thich!. Spread meat mixture down the center of dough!. Fold sides in to make a rectangle loaf; seal seams!. Bake at 350oF until brown and slice into one-inch squares!.Www@FoodAQ@Com

Sweet Potatoes with Italian Sausage

INGREDIENTS
2 large sweet potatoes, peeled and diced
1 tablespoon vegetable oil
1/2 pound bulk Italian sausage
2 red bell peppers, chopped
1 onion, chopped
2 cloves garlic, minced
1 (8 ounce) jar chunky salsa
1 teaspoon ground cumin
salt and pepper, to taste


DIRECTIONS
Bring a large pot of salted water to a boil!. Add potatoes and cook until tender but still firm, 12 to 15 minutes!. Drain and set aside!.

Heat oil in a large skillet over medium heat!. Crumble sausage into skillet and cook, stirring frequently, until browned and no longer pink, about 7 minutes!. Remove sausage with slotted spoon and drain on paper towels!.
Pour off all but 1 tablespoon oil from the skillet!. Heat oil over medium heat and add bell peppers, onion and garlic and cook until softened, about 7 minutes!.

Add to the skillet the potatoes, sausage, salsa and cumin!. Stir and cook about 5 minutes to heat through and blend flavors!. Season with salt and pepper!.Www@FoodAQ@Com

Fennel And Sausage Pasta
* 2 lbs fettuccini
* 1/2 lbs!. sweet Italian sausage
* 1 fennel bulb (sliced)
* 1 shallot (minced)
* 3 cloves garlic (minced)
* 1/2 cup cherry tomatoes (chopped)
* 1/4 cup grated parmesan
* 2 Tbsp!. olive oil
* 1 tsp!. dry oregano
* 1 tsp!. dry basil
* 1 tsp!. fresh Italian parsley (optional)

1!. Set a large pot filled with salted water to boil!.
2!. In a large pan over medium high heat, add the olive oil!. Once the oil shimmers, add the fennel, shallot, garlic and tomatoes!. Liberally salt the vegetables!. Continue at that heat for about a minute and then turn down to medium!. Let cook for 10 min!. Stir every few minutes!.
3!. Add the sausage to the now browning vegetables!. Cook for another 10-12 min!. Breakup the sausage as you cook!.
4!. Add the basil, oregano and parsley!. Stir occasionally for the next 2 min!. Turn down the heat to low and cover!. Keep warm!.
5!. Cook the fettuccini until al dente!. Add the pasta and parmesan to the pan with browned sausage and vegetables!. Stir completely!. Serve immediately!.Www@FoodAQ@Com

Broil them and serve on a bun with saurkraut for the S!. Africans, Onions, red peppers and galic stewed on the Italians and serve the T & Cheese ones cooked into a cornbread recipe!.Www@FoodAQ@Com
