How to make buttermilk out of milk?!
I'm trying to make buttermilk out of milk by adding lemon juice!. Will that work!? Will it be too thin!? I want to bake a buttermilk chocolate cake with it, and the other option is to buy buttermilk!.Www@FoodAQ@Com

Well, adding lemon juice or vinegar is not going to make buttermilk!. All it does is curdle the milk, and it is a good way to make farmer's cheese but not buttermilk!. To make buttermilk, you have to culture the milk with Lactobacillus bacteria from live yogurt or live buttermilk!. There is no other way!. Unless the lactose is fermented to lactic acid, it is not buttermilk!.
Although Lactobacillus is present in the atmosphere, leaving the milk to sit out without adding a culture will only spoil the milk!. Adding the culture helps Lactobacillus gain a head start over spoilage bacteria!.Www@FoodAQ@Com

I use 1 tbsp of white vinegar for every 1 cup of milk!. Let it sit for 15 minutes before using in a recipe!. Its not the EXACT same thing as buttermilk, but i've used it as a substitute when I didn't have buttermilk on hand for many recipes including pancakes and dessert recipes, and it worked exactly the same way for both taste and in the construction of the dish!.Www@FoodAQ@Com
To make buttermilk, use 1 cup milk and 1 tablespoon lemon juice or white vinegar!. Allow it to sit for a few minutes!. If you do purchase buttermilk and have extra, freeze it in 1 cup containers or in Ziplock bags!. You can also purchase powdered buttermilk in grocery stores!. Just add water!.Www@FoodAQ@Com
