Answers:
The veggies will be nice and tender!.!.!.some of the potatoes may fall apart a bit, but that is yummy to me!.!.!.they will absorb lots of flavor and will be delicious!. 6-8 hours on low or 3-4 hours on high is just fine!. Good luck!Www@FoodAQ@Com

My recipe, it will require a little work but should worth it for you!.

1# pot roast- Hope you are using a chuck,
1 tb olive oil
2 med onions-chopped
2 stalk of celery-chopped
2 med carrot-chopped
1 clove garlic-smashed(remove peel)
3 tb tomato paste
2 bay leaves ( so the 1st one does not get lonely!)
1/4 tsp of dry basil
1/4 tsp of dry thyme leaves
2 cups hot water
1 tb salt
black pepper to taste

Method: heat a heavy frying pan over medium high heat, add olive oil, and brown meat on both sides, place in crock pot!.
- add veggies to fry pan and saute until onions carmelize!. add to crock pot!.
-mix water and tomato paste together-add to crock pot
-add herbs and garlic, cover, put on high and go to work for the day!
-When you get home or eight hours later remove meat, skim off fat from remaining mixture and pull out bay leaves,
- add potatoes and carrots, cook until tender
-remove potatoes and carrots
-place liquid in blender and blend smooth!.
-You may not need to thicken as the chopped veggies may provide enough thickening on their own!.

Veggies:
1# baby carrots-peeled and clean
1# potatoes- peeled, clean, 1" chunks-Par cook and coolWww@FoodAQ@Com

You can definitely leave the veggies in the pot for the full amount of time to cook the roast!. They will get tender, but they also help flavor the roast, and some of their natural juices come out!. You should also use onions, garlic, and celery if you have it!. If you don't like to eat it, that is ok, but it helps flavor the roast!.
also, if you have the time, I would marinade the roast for a few hours before you put it in the crock pot!. Marinade it with olive oil and any of your favorite seasonings, like garlic powder, lemon pepper, italian seasonings, salt, etc!. You could place it in a big zip lock baggie, or in a plastic tupperware, just make sure you turn it over and keep the marinade all over it! Yummy! Am I invited to dinner!? What time!?Www@FoodAQ@Com

It will probably only take it 4-5 hours to cook, being so small!.

just leave them in larger pieces

and they will make the gravy wonderful
don't forget to add a bay leafWww@FoodAQ@Com

If you don't want to leave the vege's in the crock the entire time, add them about 1/2 way through the cooking time!.Www@FoodAQ@Com
