? 8 oz box elbow Macaroni, cooked
? 1 small onion, chopped
? 2 eggs, hard-cooked & chopped
? 3 Tbs!. Sweet Pickle Relish
? 1 Heaping Tbs!. Mayonnaise

Directions
? Combine all ingredients and toss gently until everything is coated well!.

2 cups dry elbow macaroni, cooked, rinsed, and drained
1/3 cup diced celery
1/4 cup minced red onion, soaked in cold water for 5 minutes, drained
1 tablespoon minced flat-leaf parsley
1/2 cup diced vine-ripened tomato (optional)
1/2 cup prepared mayonnaise
3/4 teaspoon dry mustard
1 1/2 teaspoons sugar
1 1/2 tablespoons cider vinegar
3 tablespoons sour cream
1/2 teaspoon kosher salt, plus more to taste


Freshly ground black pepper
In a large bowl combine the macaroni, celery, onion, parsley and tomato, if using!. In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt!. Pour the dressing over the salad and stir to combine!. Season with salt and pepper to taste!. Serve!. Store covered in the refrigerator, for up to 3 days!.

SUMMER'S HARVEST SALAD

7 ounces macaroni, * see note
1 cup fresh broccoli, flowerets
6 ounces shrimp, cooked
1 small tomato, chopped
1 cup spinach leaves, thinly sliced
1/3 cup red onion, sliced
1/2 cup Italian salad dressing
2 teaspoons salad supreme seasoning
1/2 teaspoon salt
1 dash cayenne pepper
1 boiled egg, grated

Prepare macaroni according to package directions, add broccoli during last two minutes of cooking time; drain!. Combine macaroni and broccoli, shrimp, tomato, spinach and red onion!. Blend together Italian dressing, salad supreme seasoning, salt and cayenne pepper!. Toss dressing with salad mixture!. Garnish with egg and sprinkle with salad supreme!. Serve immediately or cover and chill!. Refrigerate leftovers!. 6 to 8 servings!.

Cook up a bag of salad macaroni according to package directions, drain and run it under cold water then drain again!.
In a large bowl take about a cup of mayo and mix with macaroni add a bottle of hot dog relish, 2 tablespoons of prepared mustard, one large jar of pimentos and a bit of minced onion (optional)!. Add a bit of salt and paprika!.

Tortellini Salad

9 oz cheese tortellini cooked and cooled
1 cup julienned ham
3/4 cup frozen baby peas thawed
1/2 cup swiss cheese cubed
2 Tbsp minced green onions
1 Tbsp minced parsley
2 cups ranch dressing

Mix together and serve!.

Spinach Pasta Salad

1 (12-oz) package bowtie pasta
2 oz!. crumbled feta cheese
1 (10-oz) package baby spinach leaves
1 ? cups black calamata olives, pitted and sliced
1 tomato, diced
1 cup Italian salad dressing
Juice of one lemon
Salt and pepper to taste

1!. Prepare pasta according to directions on package!. Drain!.
2!. Transfer pasta to mixing bowl and add feta cheese, baby spinach leaves, black olives, and diced tomato!.
3!. In a separate bowl, mix together salad dressing and lemon juice, adding salt and pepper to taste, for the vinaigrette!. Pour your vinaigrette over pasta and toss!. Refrigerate for four hours!. Serve chilled!.

Cooked noodles (I use multi-colored spirals)
About 1/2 a cup or more of Italian salad dressing (I use Good Seasons Italian Dressing, but any kind you like is fine)!.
1/3 each of red, yellow and green pepper, chopped
Cubed medium cheddar and Monterrey Jack cheese or Pepper Jack (as much as you like)
Some sliced green olives
Some chopped, seeded tomatoes
Salt & pepper
Toss together and let sit a while!.

1/4 C grated carrots
2 stalks green onion
1/4 C milk
1 C Best Foods or Hellman's mayonaise (a must)
salt/pepper
