You don't boil the french fries!. You should cut them into fries shapes and fry them!. I guessWww@FoodAQ@Com
We do home fries at my work!. Here's the process:
Cut potato in a potato slicer (cuts them into fry-shapes, basically)!.
Put potato slices in the deep fryer @ 350 degrees
Pull them out 4 minutes later
Shake oil off of them
Season to taste
No boiling involved!. Boiling the potato makes them softer and they disintegrate in the fryer!. also, the end result is not as crunchy (as french fries should be) if they've been hydrated!.Www@FoodAQ@Com

Nooo, don't boil the potatoes!.
If you want really crispy french fries, you can bring water to boil (here you can add 2 tbsps sugar - dont worry you wont have sweet french fries! it only helps to being more crispy), turn water off and then drop carefully potatoes into the hot water and allow to soak for 1 hour!. Then fry in deep oil at 325° for 5 minutes!. Drain!. Increase heat to 375° and fry until fries are tender and nicely browned!. Place in a paper towel or cloth to absorb much of the oil!.Www@FoodAQ@Com
