How do I make the dish Ratatouille like it was made in the movie?!
Ever since I saw the movie Ratatouille, I have wanted to eat the dish of the same name the way Remy the Rat cooked it for Ego the critic!.
I have looked around online but I have only come across different versions of it!.
I would like to make the dish like they did in the movie where it was made in a pillar of sorts and looked crispy etc!.
Is it possible to make that!? If so, where can I find the recipe/instructions!?
And also, I hate zucchini and it seems to be a part of the dish!.!.!.can it be substituted or left out and still be able to create the dish like in the movie!?

Ratatouille is basically a very, very yummy veggie stew made from tomatoes, aubergines (eggplants), courgettes (zucchini), onions, garlic, herbs and olive oil!. The problem with making these ingredients into a crispy pillar is that they all (apart from the oil) contain a lot of water!. You can cut them up and pile them on top of each other (raw) but as soon as you apply any kind of heat to cook them they will leach water and your pile will fall down!.
Never mind!. Ratatouille is a lovely healthy mix of delicious veg!. I make it without oil in a heavy pan until it's cooked through (about 30 minutes!.)
You could try this - cut the veg into fairly large pieces!. Let it cook 'til it's unctious but still holds a good shape!.
Pile this onto an oven tray using a slotted spoon (one with holes in so the fluid drains out) and cover with grated cheese!. (You've seen the film so use that as your inspiration) Put into an oven or under a grill until the cheese is browned!. Leave to cool for a few minutes!.

Ratatouille is not "crispy" it is a stewed vegetable dish!.
You could leave out the zucchini, but really, it takes on the flavor of the dish, so if you were blindfolded, you wouldn't be able to tell which was which really!.!.
1 large eggplant, or several smaller ones
- 2 medium zucchini
- 1 onion
- 1 pepper
- 2 tomatoes (more if small)
- 2 cloves garlic
- 2 tablespoons chopped basil, oregano or marjoram (or a mix)
- 2 tablespoons chopped parsley (optional)
- 4 tablespoons olive oil
salt
* Cut eggplant, zucchini, pepper and onion into cubes of about 1/2 inch!. Mince or press the garlic!. Finely chop the tomatoes, retaining seeds and juice!.
* Heat 2 tablespoons olive oil in a large skillet over medium heat!. Sauté the eggplant until it begins to brown a little!. Remove eggplant, add to the pan the remaining 2 tablespoons olive oil, the onions, zucchini and peppers!. Cover, reduce the heat and cook for 10 minutes!.
* Add garlic and tomatoes and cook 5 minutes!. Add the browned eggplant and the chopped herbs and cook until all vegetables are tender - 10 to 15 minutes!.
* Add salt to taste and serve hot or at room temperature!.Www@FoodAQ@Com

Think of ratatouille as is more of a concept dish than a specific recipe!. Similar to American "stew", it can take on a number of forms and is open to interpretation and experimentation!. Let your tastes and preferences inspire you to create your own signature version of ratatouille!
The basic components that define the ratatouille are:
tomatoes (the main ingredient)
zucchini
eggplant
garlic
onions
herbs
These ingredients are traditionally sauteed in olive oil and can be served over rice or potatoes, preferably with a crusty French bread (and a glass of wine for the chef!.)
Recipe for a simple ratatouille
Ingredients:
1 medium sized onion, chopped
3 cloves garlic, minced
1 medium or large eggplant, diced
1 can stewed tomatoes
