I have to do a project in american Literature!.!.so I need to find a recipe on something in the Puritan or maybe a recipe in or near when Edgar Allen Poe was alive!.!.

Answers:
This would be during the Puritans times!.
During the colonial times (1640 - 1700) they had these recipes:
Corn Cakes
1/2 pound Salt Pork
2 cups Cornmeal
3/4 to 1 cup boiling Water
Salt and pepper to taste
· Slice salt pork and fry until crisp to render the fat!.
· In a medium bowl, mix cornmeal, salt, and pepper!.
· Add water to cornmeal, 1/4 cup at a time!. Mix well after adding each 1/4 cup of
water until mixture forms a firm dough!. The batter should not be runny!.
· Allow dough to sit for about 10 minutes!.
· Break off 1/4 to 1/3 cup-size pieces of dough and shape into patties!. The patties
should be firm, but not crumbly!. If they are crumbly, return them to the bowl and
mix in a bit more water!.
· Fry the corn cakes in the hot salt pork fat!. Cook until edges are brown, turn over
and cook until brown!.

Colcannon
5 or 6 medium turnips, cleaned, peeled, and chopped into small pieces
About 2 1/2 cups kale, cabbage, or a combination of both, stemmed, cleaned, and torn into
small pieces
2 medium onions, peeled and chopped small
2 cloves garlic, finely minced
2 teaspoons salt
1 teaspoon pepper
Water
Butter
· In cooking pot, melt some butter!. Add turnips, onions, and garlic!. Fry until they are lightly
browned and a little tender!.
· Add kale and/or cabbage (and more butter if necessary)!. Fry for about 10 minutes, or
until greens start to soften!.
· Cover with water and bring to a boil!. Let cook for about 20 minutes, or until turnips are
very soft!.
· Remove from pot and save about 1/2 cup liquid!.
· In a bowl, mash vegetables together, adding enough cooking liquid to mash them as
smooth as possible!.
· Add butter, salt, and pepper!.
· Serve warm!.

Meat Pasties
1 pound, finely chopped cooked meat
1 large, finely chopped onion
2 cloves, finely chopped garlic
2 cups bread crumbs
2 eggs, well-beaten
2 tablespoons mixed herbs
Salt and pepper
Coffin dough for two pies, or substitute recipe for pastry or pie dough
Oil or lard for frying
About 1 cup cornmeal
· Mix together meat onion, garlic, bread crumbs, eggs, herbs, salt, and pepper!.
· Blend well!. Mixture should be firm enough to mound!.
· Roll out dough and cut into five-inch circles!.
· Place about 2 tablespoons of the filling onto half of each dough circle!.
· Fold the circle in half and seal the edges with a little water!.
· Roll lightly in cornmeal and then fry in hot oil or lard until brown (turning over once)!.

Bean Fritters
1 1/4 cups white beans, cooked and drained
1/4 cup milk
4 tablespoons sugar
1/2 cup flour
1/2 cup cornmeal
2 tablespoons oil
1 large, slightly beaten egg
1 teaspoon salt
1 tablespoon chives
1 tablespoon savory
Lard, fatback, or oil for frying
· Mash cooked beans and press through a sieve until fairly smooth!.
· Mix in the rest of the ingredients!. The batter should be thick, but not stiff!. Add more milk if
it is too stiff!.
· Heat your oil in a fry pan until it smokes!.
· Drop fritter batter into the hot oil, about 2 tablespoons per fritter!.
· Fry until the edges are golden, then flip and fry other side until done!.

Easy American Indian Fry Bread

1 can refrigerator biscuits
2 Tbsp!. vegetable oil
All-purpose flour

1!. Heat oil in a large skillet over medium heat!.
2!. Sprinkle a small amount of flour on a flat surface!.
3!. Roll each biscuit to a 1/4" thickness on floured surface!.
4!. Fry biscuits in heated oil until each side is golden brown!.


Fried Meat Pies

1 can jumbo refrigerator biscuits
2 cups cooked chicken or pork, shredded
Salt and black pepper to taste
Pinch of ground cinnamon
2 onions, thinly sliced
5 Tbsp!. vegetable oil, divided

1!. Heat 2 Tbsp!. of oil in a skillet over medium/high heat
2!. Add thinly sliced onions and cook until they begin to brown;
stirring constantly!.
3!. Turn down heat and simmer until onions become dark brown,
stirring constantly; drain and set aside!.
4!. Roll out each of refrigerated biscuits to ? inch thick circle!.
5!. Shred cooked meat into a bowl!.
6!. Season with salt and pepper to taste!.
7!. Add a pinch (less than 1/8 tsp!.) of cinnamon to meat and stir
to mix!.
8!. Place 2 Tbsp!. of meat off-center of dough circle!.
9!. Put ? tsp!. caramelized onions on meat!.
10!. Fold dough to make a half-moon and seal edges with the tines
of a fork!.
11!. Refrigerate for 1 hour!.
12!. Fry in 3 Tbsp!. oil in skillet over medium heat until golden brown

a fruit or meat pie, but instead of butter or Crisco, use lard!.

You may also check out the Historical Williamsburg website and see if they have any old recipes!.!.!. many of their recipes look very similar to traditional English (UK) recipes, using lard (pork fat), suet (beef fat), and leftover bits of meats or fruits!.Www@FoodAQ@Com
