Your best bet is to only dip the ones that your going to eat and then store the strawberries that you haven't dipped in the fridge and the un-used chocolate in an air tight container at room temp!. Otherwise you run the risk of blooming the chocolate (the milk fat in the chocolate will rise to the surface and leave a milky looking residue on the outside) and condensation on chocolate strawberries can make even good chocolate taste cheap!.

What I do is melt the chocolate in a microwave safe container right in the microwave!. Dip the ones I want and save the left overs for the next time!. If I don't get to dipping the strawberries at a later date I make shortcakes w/them!.Www@FoodAQ@Com

Step 1
Choose a covered plastic container to store your chocolate-covered strawberries in!. Make sure the container is large enough to hold all of the strawberries without squishing or crowding!.

Step2
Lay the chocolate-covered strawberries on a piece of parchment or waxed paper and place them in the refrigerator for 8 hours to harden thoroughly the chocolate!. Remove them from the refrigerator and allow them to come to room temperature if you are going to eat them right away!. Do not let the strawberries warm up if you are going to store them!.

Step3
Line the bottom of your plastic container with parchment or waxed paper and then place a single layer of chocolate-covered strawberries on top of the paper!.

Step4
Put another piece of paper in and then add your second layer of strawberries!. Continue layering the strawberries, placing a piece of paper between each layer, until the container is full or you have used up all of the berries!.

Step5
End your layering process with a piece of the parchment or waxed paper and then put the lid on your container!. Place the container in the refrigerator on the bottom shelf or in the bottom vegetable drawer, because this is the coldest spot in the refrigerator!. Chocolate-covered strawberries have to be kept very cold when storing!.

Stick 'em on wax paper and then put them in the fridge!. That is what I do whenever I make chocolate strawberries!. They may stick to the paper a little when you try to take them off, but that's not really a problem; you can just peel the paper scrap off, and it'll be fine!.

Your best bet would be to eat within 48 hours, though, because after a while, the strawberries might begin to go a bit mushy, and the chocolate may loose its original taste and quality!.
