Potatoes--Help?!


Question: Potatoes--Help!?
We are having a fish fry and grilled pork chops for dinner!.

I have a TON of taters in the fridge, what should I make with them!?

Oh-sorry but no potato salad, hubby doesn't like it!

Chipotle Chile Fries

6 - 8 Yukon Gold Potatoes
1 tbs Chipotle Chile Powder
2 tsp red & black pepper seasoning
1 tsp kosher salt
2 - 4 tbs olive oil
15 x 10 stoneware baking pan

Turn oven to 425 degrees!. Place stoneware
baking pan in oven to heat the pan!.

Wash potatoes!. Cut in half, cut each half in
quarters!. In batches microwave in a single layer
for 2 minutes!. Place in bowl and drizzle each
batch with a little olive oil

Mix seasoning ingredients!. Sprinkle over potatoes
a little at a time, stir potatoes and season until all
potatoes are coated!.

When the oven is ready, take pan out of oven
and slowly pour the potatoes on the hot stoneware
pan!. With a spatula spread the potatoes evenly!.
The potatoes will sizzle immediately, this is
a good thing!

Set timer for 20 minutes!. Remove potatoes, set
on hot pad, Stir potatoes and turn!. Return to oven
and cook 15 minutes!.

Cut them into 1-1 1/2 inch thick long wedges with the skin on, microwave them to slightly soften them up where they are still firm when stuck with a fork!.

Then coat them with corn oil, sprinkle garlic powder, salt, pepper, crushed or regular rosemary leaves and paprika and/or chili powder and roast them under the broiler without burning them!.

You'll need to keep watch on them because I'm not sure of the time required for toasting without burning them!.

Might want to melt some cheese over them for an extra kick in flavor!.Www@FoodAQ@Com

If they're POTATO potatoes (as in just potatoes in no design or type), then it might be best to bake them!. Who knows!? It might be nice to have a little specialty with the fish and pork!. Another choice I'd have is to make one of your own creations with them using spices and make them peeled (might have fun doing it)!.Www@FoodAQ@Com

I would probably make chips (fries) and serve with peas, ideally mushy!. Or maybe a gratin, slice parboiled pots, onion and mince garlic, layer up in dish with knobs of butter, milk and cheese, season well, bake on medium heat for aprox 30mins!.Www@FoodAQ@Com

I like to nuke mine in the microwave first for about 3 min!.

Then I cut them and cube them in bitsize pieces!. Fry them up in some olive oil on the stove, Add some onion, garlic, salt and pepper!. Cook until golden brown!.Www@FoodAQ@Com

Fish and chips are always great together,,, slice them in wedges add some garlic salt and pepper and fry them, use ranch or ketchup for dippingWww@FoodAQ@Com

Chips, always go well with fried fish and pork chops!. Or par-boil them as wedges and finish off in fryer, bit of spice on the wedges, sorted!.Www@FoodAQ@Com

Scalloped or Au Gratin
Scalloped:
3 Tbsp butter
2 lbs (about 4 medium sized) Russet potatoes, peeled, sliced 1/8-inch thick
1 large yellow or white onion, thinly sliced
2 Tbsp chopped fresh parsley
1 Tbsp chopped fresh chives (optional)
2 thick slices of bacon, cooked and chopped
2 1/2 cups grated Swiss or Gruyere cheese (about 8 ounces)
1/2 cup grated Parmesan cheese (about 2 ounces)
2 1/2 cups to 3 cups of half-and-half (half milk, half cream)
Salt and pepper
Preheat oven to 350°F!. Butter a large casserole dish with 1 1/2 Tbsp of butter!. If you use a casserole dish that is about 9x13 (bigger than the one shown) you'll have more surface area, more of the potatoes will brown, and the cooking time will be faster!.
Layer the bottom of the casserole dish with 1/3 of the potato slices!. Sprinkle with salt and pepper!. Layer on 1/2 of the sliced onions and 1/2 cup of the Swiss cheese!. Layer on 1/2 of the bacon, 1/2 of the parsley and chives!. Sprinkle with a little Parmesan!.
Repeat by layering on 1/3 of the potato slices, sprinkle again with salt and pepper!. Layer on the remaining sliced onions, 1/2 cup of the Swiss cheese, the remaining bacon, parsley and chives!. Sprinkle with a little Parmesan!.
Top the casserole with the remaining potato slices!. Add the half and half!. Dot the potatoes with the remaining 1 1/2 Tbsp of butter!.
Cover the casserole with aluminum foil and bake in the oven for one hour!. After an hour, remove from the oven, remove the foil, sprinkle on the remaining Swiss and Parmesan cheese!. Return to the oven for an additional 30-40 minutes!. When done, the potatoes should be tender, but not mushy, and the liquid should be mostly absorbed!.
Serves 8!.

Au Gratin:
3 cups diced cooked potatoes
6 tablespoons butter or margarine
3 tablespoons flour
1 1/2 cups milk
1 cup shredded Cheddar cheese
salt and pepper
1 cup soft bread crumbs
Potatoes au gratin recipe!.
Place potatoes in a shallow, broilerproof baking dish!. In a saucepan over medium-low heat, melt 6 tablespoons butter!. Remove 3 tablespoons of butter to a cup or bowl; set aside!. To the remaining 3 tablespoons of butter in the saucepan, add flour!. Stir to blend well; gradually stir in milk!. Continue cooking, stirring constantly, until sauce is thick and smooth!. Add cheese and continue stirring until cheese is melted!. Pour sauce over potatoes in baking dish; mix gently!. Place bread crumbs in a bowl; drizzle with remaining 3 tablespoons melted butter; toss to coat!. Sprinkle buttered bread crumbs evenly over potatoes!. Bake potatoes au gratin at 400° for about 15 minutes to heat through, then broil until golden brown!. Recipe for potatoes au gratin serves 4!.
