Tomato Basil Chicken, or Chicken Parmesan by any other name!
1 15 oz can tomato sauce
1 15 oz can chopped tomatos
1/2 cup chopped fresh basil
2 T dried Italian herbs
1 clove garlic, minced
1/4 yellow onion, chopped
1/4 cup olive oil
1/8 tsp red pepper flakes
1/4 tsp pepper
1 tsp salt
1 T brown sugar
1/4 cup red wine
1/2 cup grated parmesan cheese
6-8 chicken thighs or combination of chicken breasts, thighs, and legs!.
In saute pan, heat 1 T olive oil!. Add chopped onion and garlic!. Saute until translucent and onion is limp!. Add herbs, tomato sauce, diced tomatos, wine , sugar, salt, pepper, red pepper flakes and fresh basil!. Bring to a boil, then reduce heat and simmer for 15 minutes!. Add 1/4 cup grated parmesan!. Season chicken with salt and pepper and brown in non-stick pan!. Place in baking dish!. Spoon sauce over chicken and sprinkle with remaining cheese!. Cover and bake at 350 degrees for 1 hour, or until juices run clear and mixture is bubbling!. Serve with linguini tossed with olive oil and chopped flat leaf parsley!.
