My pancakes are always very fluffy!.

The trick for me is to put the mix in with a large laddle!.!.!.Then when it looks bubbly on the one side turn it over just long enough to brown!.

you can add the cinnamin either in the mix or on top of individual pancakes!.

The butter on top of the pancakes as soon as they come off the pan/griddle!.

Should be ok then!.!.!.Www@FoodAQ@Com

I follow the directions on the box!.Have the griddle nice and hot, brush with some oil then pour on some of the batter!.Let it sit until the edges are all bubbled and dry looking!.Flip over but don't press down!.Cook till browned!.Eat!.Www@FoodAQ@Com

if you put an egg in, just use the egg whites and beat them until their fluffy then just fold into the pancake batter!.!.!. it should help!. also, try adding a bit of baking powder, that usually helps tooWww@FoodAQ@Com
