some of the recipes may be complex, but the sites can be very informative for you to take with you in your search for other simpler recipes!.
olive oil is a healthy oil, with antioxidant qualities especially in combination with other foods, has good fats!. read about it to understand how it is good for you and how to use it to best maximize the beneficial qualities!.
when i make an omelette i use a 9" cast-iron and a tablespoon or so of butter, i don't mind a dab of fat, i don't eat butter or grease everyday!. heat pan, when droplet (of 2-3 eggs whipped, salt and pepper) off fork into pan cooks immediately chuck in the eggs, (see good eats/alton brown for great details - the actual good eats episode 'zen and the art of omelet maintenance' has much more complete info - of how to perfect the omelette making process - the link isn't working, look up 'omelet' at the food network, and pick the first choice by alton brown, at the bottom of the recipe it has 'other recipes from this episode' and also see 'frittata') i don't like my eggs runny, so i usually flip my eggs over before filling, but if you are proficient you can manage to cook the egg without flipping!. then i put on one half of the egg circle: chopped fresh spinach (if the spinach is too long it can be difficult to get an easy forkful), chunks of tomato, chives or scallions minced, red onion diced, some grated parmesan, romano, or cheddar, or whatever you want to put in!. some crumbled tofu right in the egg, mushrooms, asparagus, broccoli, anything!. fold in half, let get warm inside, flip over just to be sure - still folded in half, let get warmed!. done!. it just takes practice to get omelettes down to a science in exactly how you like them!. i believe a non-stick pan is the preferred cooking vessel, and allows for less grease!. you could try pam or other spray to use even less grease/fat!.
or, make a frittata, basically an open-faced omelette that finishes cooking under the broiler - make sure you have a broiler-safe pan/handle!.
hope you find some great recipes that fit into your schedule, or at least some info!

ps, the food network/ellie krieger link doesn't seem to be going to the page i want it to!.!.!. at the top of the page type in "ellie krieger" in the search box, and pick 'ellie krieger' the first choice!. that site can be confusing, and i usually look for a specific recipe i found interesting!. sorry, but ellie is a nutritionist, and if you can muddle through the site to figure out where her recipes are, or watch her show saturdays, she has a lot of info to offer!.Www@FoodAQ@Com
