Question: Is there a way to refrigerate creme cheese and not have it become really hard and make it stay soft!?
It's like I'm moving a mountain trying to spread it on bread!.

You put it in the fridge, it becomes unspreadable!.

You leave it out, it goes off!.

You could always take it out a few minutes before you are going to use it and let it get room temp!. As with any cheese product, it hardens when cold!. You ever forgot a pkg!. of cheese on the counter!? When you go back its all soft, but if you put it back in the fridge it gets hard again!.
And its still good!.

Mix it in a stand mixer with a paddle attachment!. When everything is spreadable and mixed thoroughly just put it in a slightly larger container and refrigerate!. also, you could try turning the temperature in your refrigerator down a little (instead of having the temp knob turned all the way up, turn it down to 3/4 way) and/or direct more cold air to the freezer (turn it halfway between halfway and "more air towards the freezer") depending on your model of fridge!. Or just buy Philadelphia Cream Cheese (the one in the grey container)!. That stuff never hardens up on meWww@FoodAQ@Com
