Colour of cooked potatoes?!
The potatoes were white when I put them into the saucepan to cook!.
They were white when placed on the plate so what makes them go black after that!? Is it harmful!? Should I discard them and not have potatoes that day!?

Some varieties of potato are prone to doing this, caused by the starch oxidising - it is also caused by elevated nitrogen levels in the ground the spuds were grown in!.Www@FoodAQ@Com
If they turn black after boiling, its the cookware that's the problem!. You're using either an aluminium pot or a reactive pot!. Try using different cookware!.
It is safe to eat, they will just look strange!.
If you want to prevent it, add lemon into them after cooking and draining them and keep them covered tightly!.Www@FoodAQ@Com

I am sure the potatoes go black because they are no longer fresh, they won't do you any harm but it is very off putting trying to eat them when they have turned this colour!.Www@FoodAQ@Com
