Question: Whats a great meal to make with ground beef!?
I'm not into sloppy joes!. Burgers and pastas have just become boring!. What I can make that does not involve tomato sauce, noodles, or buns!.

A Kid Favorite Meal:
1 pound lean ground beef
1 can Cream of Mushroom Soup
1/4 cup sour cream
2 tsp Worcestershire sauce
8 slices American Cheese
1 bag tater tots

Preheat oven 350 degrees

Lightly grease a 13 x 9 glass dish!. Break up the beef into small pieces and spread in the baking dish!.

In a small bowl, add soup, sour cream and Worcestershire sauce, mix and pour over beef!. Lay the cheese slices on top and cover with tater tots!.

Bake uncovered for one hour!. Serve immediately!.

Chianti Marinated Beef Stew


2 1/2 to 3 pound beef brisket
1 (750 ml) bottle Chianti wine
4 tablespoons olive oil
Salt and freshly ground black pepper
1 (4-ounce) piece pancetta, cut into 1/4-inch pieces
3 medium carrots, peeled and cut into 1/2-inch pieces
1 stalk celery, chopped into 1/2-inch pieces
2 cloves garlic, peeled
1/4 cup (1 1/2 ounces) kalamata olives, halved
6 ounces green beans, halved
4 medium red potatoes, quartered
2 sprigs rosemary
2 sage leaves
1 (15-ounce) can diced tomatoes
4 cups beef broth

Place the beef in a 13 by 9-inch glass baking dish!. Pour the wine over the meat and marinate in the refrigerator for 1 1/2 hours!. Turn the meat over and marinate for another 1 1/2 hours!.
Remove the meat from the wine and pat dry with paper towels!. Reserve the wine!.

In a large Dutch oven, heat 3 tablespoons of the oil over medium-high heat!. Season the meat on all sides with salt and pepper!. Using tongs, place the meat in the pan and brown on all sides, about 2 minutes each side!. Remove the meat and add the remaining oil!. Add the pancetta and cook, stirring frequently for 2 minutes!. Add the carrots, celery, garlic, olives, green beans, potatoes, rosemary, and sage!. Cook for 3 minutes!. Pour the reserved wine, tomatoes, and beef broth into the pan, scraping up the brown bits that cling to the bottom of the pan with a wooden spoon!. Return the meat to the pan and bring the liquid to a boil!. Cover the pan and simmer for 3 to 3 1/2 hours or until the meat is very tender!.

Remove the meat and the rosemary sprigs from the stew!. Place the meat on a cutting board and cut into quarters!. Using 2 forks, shred the meat into bite-size pieces!. Add the shredded meat to the stew and cook until warmed through, about 5 minutes!.Www@FoodAQ@Com

2 pounds beef bottom round, trimmed of excess fat
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3/4 cup all-purpose flour
1/4 cup vegetable oil or bacon drippings
2 cups chicken broth
1 teaspoon dried thyme
Preheat the oven to 300 degrees F!.
Cut the meat with the grain into 1/2-inch thick slices and season on both sides with salt and pepper!. Place the flour into a pie pan!. Dredge the pieces of meat on both sides in the flour!. Tenderize the meat, using a needling device, until each slice is 1/4-inch thick!. Dredge in the flour again and set aside!.

Add enough of the vegetable oil or bacon fat to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat!. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd!. Cook until golden brown on both sides, approximately 2 minutes per side!. Remove the steaks to a plate and repeat until all of the steaks have been browned!.

Remove the last steaks from the pot and add the chicken broth and thyme and whisk until the liquid just comes to a boil!. Return the steaks to the pot and make sure they are all submerged in the liquid!. Cover the pot and place it in the oven on the middle rack!. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart!.Www@FoodAQ@Com

The koftas (meatballs) in this dish can be made with beef, lamb or chicken!. It makes a great meal when served with jeera rice and kachumbar salad!.
Prep Time: 20 minutes
Ingredients:

* 1 kg beef mince (2!.2lbs ground beef)
* 5 onions chopped very fine
* 2 tbsps garlic paste
* 1 tbsp ginger paste
* 2 tbsps garam masala (a spice blend)
* 3 tbsps tomato ketchup
* 1/2 cup coriander leaves chopped fine
* Salt to taste
* 4 large tomatoes cubed
* 2 tsps coriander powder
* 1 tsp cumin powder
* 1/2 tsp turmeric powder
* 1 tsp chilli powder
* 3 tbsps vegetable/canola/sunflower cooking oil
* 2 tbsps garlic paste
* 1 tbsp ginger paste

Preparation:

* Put the minced beef, 2 of the chopped onions, 2 tbsps garlic paste, 1 tbsp ginger paste, 2 tbsps garam masala, tomato ketchup and coriander leaves in a lage bowl and mix well!.
* Form the mixture into equal sized balls and keep on a plate!.
* Heat the oil in a pan and add the remaining onions!. Fry till they are light brown then add the ginger and garlic pastes!. Fry for a minute!. Add all the spices - coriander, cumin, red chilli powder, garam masala, turmeric - and fry for 2-3 minutes!.
* Add the tomatoes and mix well!. Fry the masala till the oil begins to separate from it!.
* Add 2 cups of warm water to the masala and season with salt to taste!. Gently add the meatballs now!. Do not stir for at least the next 5 minutes!.
* Stir gently so as not to break the meatballs!.
* Cook uncovered till the meatballs are done!. The gravy can be as thick as you like so add or dry up the water as required!.
* Serve with rice

Shepard's Pie:

Sautee chopped, white onion in butter!. Add ground beef, salt & pepper (and whatever other seasoning you like - paprika, garlic powder)!. Brown & drain grease!. Put in casserole dish!. Layer mixed, chopped or frozen veggies, then mashed potatoes (prepared, instant or homemade) then shredded cheddar!. take the beef and season to your taste!. I like grill mates hamburger seasoning!. mix the beef up so it doesn't fall apart!. make large size balls out of the beef - fist sized!. poke a hole into the middle of each with your finger!. Put in 1/4 of a piece of polio string cheese and seal the hole back up!. Put the balls into muffin tins an bake at 375 degrees for about 30-40 minutes check one for doneness!. COCKTAIL MEATBALLS

1 lb!. ground beef
2 eggs, slightly beaten
1 c!. cracker crumbs
2 tbsp!. instant minced onion
2 tbsp!. sweet pepper flakes
9 drops Tobasco
1/4 tsp!. garlic salt

SAUCE:

3/4 c!. catsup
1/2 c!. water
1/4 c!. vinegar
1/3 c!. firmly packed brown sugar
1 1/2 tbsp!. instant minced onion
1 tsp!. mustard
1 1/2 tsp!. salt
4 tsp!. Worcestershire
6 drops Tobasco

Mix all ingredients except sauce!. Shape into 1 inch balls!. Place single layer of meatballs in ungreased 15 x 10 jelly roll pan or 13 x 9 inch pan!. Bake at 325 degrees F!. for 30 minutes!. Place meatballs in casserole!. Combine sauce ingredients and pour over meatballs!. Bake 1 hour longer!.
2 to 2 1/2 dozen meatballs!.





HAMBURGER PIE WITH CHEESE

1 lb!. hamburger
3 med!. potatoes (chopped)
1 (9 inch) deep dish pie shell
1 med!. onion (chopped)
1 can Cheddar cheese soup

Brown hamburger, onion and potatoes together!. Drain!. Add soup and simmer for 15 minutes!. Pour into pie shell!. Bake for 45 minutes or until potatoes are soft!. Bake in 375 degree oven




DEEP DISH HAMBURGER PIE

1 1/2 lb!. hamburger meat
2 c!. bisquick/pioneer mix
2/3 c!. milk
1/3 c!. chopped onion; green pepper
1 c!. vegetable broccoli or corn
1 1/2 to 1 c!. spaghetti sauce
Seasonings, garlic salt, pepper, basil, parsley, seasoning salt
1 1/2 c!. grated cheddar cheese

Cook hamburger; drain!. Add onion, green pepper, seasonings, 1/2 spaghetti sauce, vegetable; simmer 5 minutes!. In bowl, mix milk and baking mix, knead a little and flatten to fit in 13 x 9 pan!.
Grease pan and spread dough evenly in!. Spread remaining spaghetti sauce on dough!. Evenly pour meat mixture over dough!. Sprinkle with cheese!. Bake at 400 degrees for 20 to 25 minutes!.





Cheeseburger Bake


4 to 6 servings

1-1/2 pounds lean ground beef
1-1/2 teaspoons onion powder
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/3 cup ketchup
1-1/2 cups (6 ounces) finely shredded sharp Cheddar cheese
1 package (7-1/2 ounces) refrigerated biscuits (10 biscuits)

Preheat the oven to 450°F!. Coat an 8-inch square baking dish with nonstick cooking spray!.
In a large skillet, brown the ground beef with the onion powder, garlic powder, and pepper over high heat, stirring to break up the beef!. Drain off any fat, then add the ketchup and cheese; mix well and pour into the baking dish!.
Place the biscuits over the top and bake for 8 to 10 minutes, or until the biscuits are golden and cooked through!.





Pizza Casserole

6 to 8 servings

1 pound lean ground beef
1 can (14!.5 ounces) diced tomatoes with basil, garlic, and oregano
1 container (10 ounces) refrigerated pizza crust
2 cups (8 ounces) shredded mozzarella cheese, divided
1/4 cup grated Parmesan cheese

Preheat the oven to 425°F!. Coat a 9" x 13" baking dish with nonstick cooking spray!.
In a medium skillet, brown the ground beef over medium-high heat, stirring and crumbling the beef until no pink remains; drain!.
Add the tomatoes to the beef; cook until heated through!.
Meanwhile, unroll the pizza crust; press over the bottom and halfway up the sides of the baking dish!. Sprinkle 1 cup mozzarella cheese over the crust then top with the meat mixture!.
Bake uncovered for 12 minutes!. Top with the remaining 1 cup mozzarella cheese and sprinkle with the Parmesan cheese!.
Bake for 5 minutes, or until the crust is golden and the cheese is melted!. Cut into squares and serve




Italian Shells Casserole
2 pounds medium-size shells
1 teaspoon salt
16 ounces sour cream
16 ounces provolone cheese, sliced
2 pounds ground beef
2 to 3 quarts spaghetti sauce (your own or pre-made)
1/2 teaspoon pepper
24 to 32 ounces shredded mozzarella cheese

Cook shells!. Rinse, drain and set aside!.

Brown ground beef!. Add salt, pepper and spaghetti sauce!. Simmer for 20 minutes!.

Spray deep lasagna pan or large casserole dish with nonstick spray!. Line with half of the shells!. Cover shells with half the meat sauce!. Spread half the sour cream over it and cover with half of both cheeses!. Repeat for the second layer!. Cover with lid or foil and bake at 350 degrees F for 40 minutes!.

Uncover and bake 20 minutes more!.

Serve hot!.




Cornbread & Chili


Serve with a mixed-greens salad, red and green grapes and brownies for dessert!.

Prep: 10 min - Bake: 60 min

1 pound ground beef
1 small onion, chopped (1/4 cup)
1 clove garlic, finely chopped
1 to 2 tablespoons chili powder
1 tablespoon Original Bisquick?
3 tablespoons water
1 can (14 1/2 ounces) whole tomatoes, undrained
1 can (16 ounces) whole kernel corn, drained
1 teaspoon salt
3/4 cup Original Bisquick
3/4 cup yellow cornmeal
2/3 cup milk
1 egg


1!. Heat oven to 350!?!. Cook beef, onion and garlic in 2-quart saucepan over medium heat, stirring frequently, until beef is brown; drain!.

2!. Mix chili powder, 1 tablespoon Bisquick and the water; stir into beef mixture!. Stir in tomatoes, corn and salt, breaking up tomatoes!. Heat to boiling, stirring frequently!.

3!. Pour into ungreased square baking dish, 8x8x2 inches, or 2-quart casserole!. Stir remaining ingredients until blended; pour over beef mixture!. Bake 50 to 60 minutes or until crust is golden brown!.
