I want to spice up/change my boyfriend's favorite dish..meatloaf. It's getting kind of old. Any alternatives?!

my boyfriend is always talking about wanting to put a surprise in his meatloaf!.!. like hiding some whole mozzarella sticks or jalapeno poppers in the loaf!.!. they you could season accordingly to match the hidden item!.!. italian seasoning and tomato sauce for the mozzy sticks (serve with pasta) or taco seasoning and a little salsa and peppers for the popper loaf (serve with rice)!.!. you could also make a cheeseburger meatloaf by throwing in some velveeta, mixing yellow mustard into the meat, topping with ketchup and pickles!.!. serve with tater tots or homefries or homemade french fries!.!.

Stuffed Meatloaf

Episode: Thanksgiving Leftovers
1 small onion, grated
3 garlic cloves, minced
1/4 cup chopped fresh Italian parsley leaves
2 large eggs
1/4 cup ketchup
1 teaspoon salt
3/4 teaspoon ground black pepper
2/3 cup dried bread crumbs
1 cup grated Parmesan
8 ounces ground beef
8 ounces ground pork
8 ounces ground veal
2 cups (packed) Ciabatta Stuffing with Chestnuts and Pancetta, recipe follows, or your favorite stuffing
1/2 cup marinara sauce
3/4 cup grated provolone
Preheat the oven to 350 degrees F!.
Whisk the first 7 ingredients in a large bowl to blend!. Stir in the Parmesan and bread crumbs!. Mix in the beef, pork, and veal!. Pack half of the meat mixture into a 9 by 5 by 3-inch loaf pan!. Spoon the stuffing over the meat in the pan, leaving a 1-inch border around the edges!. Top with the remaining meat mixture, enclosing the stuffing completely and pressing firmly!. Spoon the marinara sauce over the meatloaf, then sprinkle with the provolone cheese!.
Bake, uncovered, until the meat loaf is firm to the touch in the center and has pulled away from the sides of the pan, about 45 minutes!. Cut crosswise into slices and serve!.
Ciabatta Stuffing with Chestnuts and Pancetta:
6 tablespoons (3/4 stick) butter
8 ounces pancetta, cut into 1/4-inch dice
2 large onions, finely chopped
2 carrots, peeled and finely chopped
3 celery stalks, finely chopped
2 tablespoons chopped fresh rosemary leaves
3 garlic cloves, chopped
2 (7!.4-ounce) jars roasted peeled whole chestnuts, coarsely broken
1/4 cup chopped fresh Italian parsley leaves
1 pound day-old ciabatta bread, cut into 3/4-inch cubes
2/3 cup freshly grated Parmesan
1 cup (or more) canned low-salt chicken broth
Salt and freshly ground black pepper
2 large eggs, beaten to blend
Preheat oven to 350 degrees F!.
Butter a 15 by 10 by 2-inch glass baking dish!. Melt 2 tablespoons of butter in a heavy large skillet over medium heat!. Add the pancetta and saute until crisp and golden, about 10 minutes!. Using a slotted spoon, transfer the pancetta to a large bowl!. Melt the remaining butter in the same skillet over medium-high heat!. Add the onions, carrots, celery, rosemary, and garlic!. Saute until the onions are very tender, about 12 minutes!. Gently stir in the chestnuts and parsley!. Transfer the onion mixture to the large bowl with the pancetta!. Add the bread and Parmesan and toss to coat!. Add enough broth to the stuffing mixture to moisten!. Season the stuffing, to taste, with salt and pepper!. Mix in the eggs!.
Transfer the stuffing to the prepared dish!. Cover with buttered foil, buttered side down, and bake until the stuffing is heated through, about 30 minutes!. Uncover and continue baking until the top is crisp and golden, about 15 minutes longer!.
Yield: 8 to 10 servings

Combine all ingredients; mix well!. Spoon mixture into lightly greased muffin cups!. Bake for approximately 20-25 minutes or until meat is cooked through!.
Cool slightly before removing from muffin cups!.

2 pounds ground beef
2 eggs
1 medium onion, chopped
A couple of pinches of parsley
1/2 cup Italian bread crumbs
2 cloves garlic, chopped
Salt and pepper
8 ounces ricotta cheese
A couple of pinches of dried basil
1 (28-ounce) can of whole peeled tomatoes with basil, Italian Bread crumbs
1!. Mix first 6 ingredients, salt and pepper to taste, and mold in standard-size loaf pan!.
2!. Scoop out the center of the loaf!.
3!. In a separate bowl, mix cheese and basil, salt and pepper to taste, and fill in the hole with this mixture!.
4!. Replace scooped-out meat to make a hat covering the cheese mixture!.
5!. Top with tomatoes!. Bake at 350 degrees for 45 minutes!.
6!. Sprinkle bread crumbs over the top and bake another 15 minutes!. Makes 6 to 8 servings!.
Note: This meatloaf is very delicious and not your typical meatloaf!. I use Winn Dixie brand whole plum tomatoes with basil!. When I add the tomatoes , I crushed them!. After the meatloaf is done, I drain the grease from the meatloaf and make a tomato gravy using the tomato juices, little cornstarch and water!. Very Very good!.

1/2 c!. Grape-Nuts cereal
1 pound hamburger
1/4 c!. chopped onion
1/2 c!. water
1 egg, slightly beaten
1/2 tsp!. salt
Italian Seasoning to taste
Mix Grape Nuts and water; let stand for 2-3 minutes!. Combine rest of ingredients; mix well!. In a greased pan, shape into loaf!. Bake one hour at 350'!. To get moist loaf, cover with aluminum foil for first 30 minutes and then remove!. NOTE: This meatloaf is good and VERY moist!. I let it bake for 50 minutes!.Www@FoodAQ@Com

I use different marinades to put on top, and with the meat to change it a little!. Instead of ketchup or BBQ sauce, I'll use A-1 Texas Mesquite Marinade, or a Lawry's marinade !.!.!.!.!.!.!. I've put feta cheese & chopped spinach into the center of them too, for a change!.!.!.!.!. Sometimes I used seasoned bread crumbs and sometimes I use oatmeal !.!.!.!.!. sometimes I use 96/4 ground sirloin, and sometimes I add ground pork !.!.!.!.!.!.Just little differences, and my husband seems to like it no matter what:)Www@FoodAQ@Com
do you put mozzerella in the middle of it!? i could never eat my mom's meatloaf then my BF asked me to try and make his grandmas meatloaf recipe (i cook well) so i did!.!.!.it said to roll meat out and stuff with cheese then fold sides up and tuck in tight!. so i cooked this and i made myself soup because i didnt think i would dare eat it and when it came out of the oven and i couldnt resist!. its yummy

Add 1/2 lb cooked and crumbled bacon to the regular meatloaf recpie!. Instead of making into a loaf flatten into a rectangle and put shredded sheese in the middle and roll the meat round the cheese!. pinch ends shut and seal edge!. mix ketchup and mustard and brush on top!. Now you have a bacon cheeseburger meatloaf!.Www@FoodAQ@Com
Instead of using bread cubes or bread crumbs or crackers or whatever you use as the "filler," use any of the stove top stuffing mixes!. It's great! You need to use a bit more water or milk and an additional egg if you use a box of the stuffing!. But it's really a good way to jazz up meatloaf!.Www@FoodAQ@Com
