I bought a really neat iron skillet and it has the grill indention's in it,?!
I'm wondering can I cook with in it as if it was just a flat surface iron skillet!?
also it came seasoned so when I make chicken breast tonite do I just put oil in it and put it on medium heat to cook it!? How do you stop it from smoking up the house when using it!?

You should scrub it thoroughly with a scrub-brush, hot water and salt to get the factory gunk off of it!. Avoid using soap! Let dry thoroughly, heat it up slowly on the stove, wad up a paper towel and pour a small amount of vegetable oil onto the towel!. Do not use Pam - it leaves a sticky gunky residue!. Use tongs to swipe the oil-soaked towel all over the cooking surface of the skillet!. Flick a few droplets of water onto the skillet; it they dance and sizzle, the skillet is ready for the food!. Add the chicken and don't even think about turning it for at least 3 minutes - you need time for the meat to caramelize and get grill-marks!. You may have to adjust the heat a few times because it's not hot enough or it's smoking but you'll get the hang of it!. Good luck! Let me know when dinner's ready!Www@FoodAQ@Com
from your description ,what you have is called an Axford Broiler ,this is a special cast iron skillet that is designed for speed cooking !.The whole idea behind the Axford Broiler is to bring it up to temp at a medium rate ,but you will want it to be very,very hot before you add the food ,if the pan is already seasoned ,it should just start to smoke a little when it is at temp ,to make sure run water on your hand and shake it over the skillet ,when the water drops fall into the skillet they should skate about and sort of dance in the pan ,if they just sit there and boil away the pan is not hot enough,if the pan passes the heat test then add your food and cook as usual with the exception that you will want the turn the meat 70 to 90 degrees form the original without flipping it over to get those nice grill marks ,for chicken tonight cook as usual but do not add any liquids to the pan as this will cool it off to the point where it will not cook properly and will thus take a good deal longer to finish the birdonce your chx is properly done you may then glaze it for the last 10 minutes of cooktime ,I would use the axford glaze (1T apricot preserves per piece of chx and 1T brandy ,mix the preserve and brandy and spoon over the chx and cover the pan for 10 mins remove the cover shut down the flame ,serve and enjoy ,as for clean up NEVER USE SOAP OR DETERGENT in this pan only use hot water and rock salton a sponge to remove debris from this pan ,then rinse well ,air dry it and when it is dry give it a shot of pan spray to keep it seasoned and rust free-enjoyWww@FoodAQ@Com
I would cook only things you want to "grill" in it!.
It is great for meats, fish, panini sandwiches, etc!. It would be hard to cook things like veggies or eggs in it but it would probably work!.
Yes, use oil (spray or liquid) and it should not smoke too much while cooking on it!. You may be over-cooking your foods if it is smoking like that!.Www@FoodAQ@Com

Oh We have one of those!! And it doesnt smoke unless you liek burn something!.!.!.
Just put some pam spray on it, and slap the chicken on!.
Cook it for like a couple of mins on each side to get the nice "grill" marks on them, itll look like it just came off the grill, but it really didnt :)Www@FoodAQ@Com

you need to clean it first (with course salt and water,no soap) then when dry re-oil it!.and yes you cook like it's flat!.Unless you have a good vent you WILL smoke up your House a LOT!.

If your oil is smoking your heat is too high!. You should use it as if its like a grill!. So somethings like bacon wouldnt cook well!. I always use a little oil in mine before cooking!.Www@FoodAQ@Com
