What would be some good sides and a dessert to go with roasted chicken that I am making for tonights dinner.?!

GARLIC SMASHED POTATOES
3-4 lbs russet potatoes
1 whole bulb garlic, unpeeled
1 tablespoon olive oil
3/4 cup half and half (1/2 milk/cream)
1 stick (1/2 cup) butter
3/4 teaspoon salt (or to taste)
1/4 teaspoon paprika
2 tablespoons fresh parsley, minced
1/8 teaspoon freshly ground black pepper
Wash and peel potatoes; cut into 1 inch chunks!. Boil in salted water until fork tender, about 25 minutes!. Drain!.
Slice 1/2 inch off the top of an entire head of garlic and place in a heat-proof coffee or custard cup to bake!. Drizzle with olive oil!. Cover cup with aluminum foil and bake in a preheated 350F oven for 20 minutes or until tender!. Cool!. Squeeze out pulp of garlic and mash using a fork!.
Mash potatoes or press through a potato ricer or food mill with garlic, parsley, salt and pepper!. (Do not use a food processor or potatoes will be pasty)!.
Heat butter with half and half (any combination of milk and/or light cream may be used, as desired)!. Add to potatoes when butter has melted and milk/cream is hot!.
Taste and adjust seasonings, adding additional salt and pepper, if needed!. Scoop into a serving dish and sprinkle with decoratively with paprika!. Add a few sprinkles and/or a sprig of fresh parsley to introduce some festive color!.
Variation: 1-2 lbs cooked parsnips may be mashed in with the potatoes!.

1 qt!. carrots, sliced
2 c!. boiling water
1/4 tsp!. salt
2 tsp!. cornstarch
1/2 c!. orange juice
2 tbsp!. butter
1 tbsp!. honey
Place carrots in salted boiling water, cover and cook rapidly 8 to 10 minutes or until tender!. In a small saucepan, stir cornstarch into orange juice!. Add butter and honey!. Stir constantly over moderate heat until thickened and clear!. Drain hot carrots!. Add honey glaze and mix well!. Serve hot!. Serves 4 to 6!.
TOSSED SALAD
1 head of iceberg lettuce, cubed
1/3 cup extra virgin olive oil
4 cloves of garlic
Worcestershire sauce
1 block of Romano cheese
*optional: green olives and tomatoes
Chop garlic and let it marinate in the olive oil for at least an hour (the longer, the better!)
Then mix in grated Romano cheese and Worcestershire sauce, to taste!.
Cube the lettuce and add the dressing
PERFECT APPLE PIE
5 or 7 tart apples
3/4 to 1 c!. sugar
2 tbsp!. flour
1/2 to 1 tsp!. cinnamon
Dash of nutmeg
Dash of salt
Pastry for two-crust 9-inch pie
2 tbsp!. butter
Pare apples and slice thin!. Combine sugar, flour, spices, and salt!. Mix with apples!. Line 9-inch pie plate with pastry, fill with apple mixture; dot with butter!. Adjust top crust; sprinkle with sugar for sparkle!. Bake in hot 400 degree oven for 50 minutes or until done!.

4 Tablespoons butter or margarine, more or less as needed, at room temperature
5 slices crust-on white bread
1/2 cup golden raisins
2 cups milk
2 eggs
Preheat oven to 350 degrees F!. Add cinnamon to sugar in cup and mix well!. Set aside!.
Generously spread one side of each piece of bread with butter or margarine!.
Cutting diagonally, slice each in half!. Arrange triangle slices in pan, slightly overlapping, with butter-side up and cut edges facing the same direction, making a spiral!. As you add the bread, sprinkle with sugar, cinnamon, and raisins!.
Put milk in small bowl, add eggs, and using whisk or fork, mix to blend well!. Pour milk mixture over bread and raisins in baking pan!. Set aside for about 15 minutes for bread to absorb liquid!.
Bake in oven for about 30 minutes, or until top is golden brown!.
Serve the pudding while still warm in individual dessert bowls!. It is eaten plain or with cream poured over it!.

Take large diced taters, onion, pepper, carrots,,,whatever!. Cut them into bite sized pieced, throw in bowl!. Toss with olive oil, add some spiced and throw on a cookie sheet for 30 minutes while you roast your face!.!.!.!.chicken!.!.!.!.turning once!. You can do that on the grill, too!.
