SMOKED SALMON TAGLIATELLE (TAGLIATELLE AL SALMONE AFFUMICATO)

Serves 2

INGREDIENTS

125g pack of smoked salmon
2 cloves of garlic
1 onion
1 tablespoon of olive oil
1 tablespoon of flour
150ml carton of single cream
1 teaspoon of mixed herbs
At least 300ml of water
? of a teaspoon of salt
200g of tagliatelle
Ground pepper to taste

METHOD

Cut the smoked salmon into 2cm (1 inch) pieces!. Peel the garlic and chop it into tiny pieces!. Peel the onion and chop it into tiny pieces!.

Put the oil into a frying pan on a medium heat!. Add the onion and garlic!. Cook for a couple of minutes until the onion has gone soft!. Stir frequently to stop it sticking!. Add the flour and stir until it has absorbed the oil and juices in the pan!. Add the cream, herbs and smoked salmon!. Stir and cook for about a minute until it has made a smooth sauce!.

Put the water and salt into a saucepan on a medium heat!. Bring to the boil!. Add the pasta!. Stir it to stop it sticking to the bottom of the pan!. Bring back to the boil and continue to cook!. Stir frequently to stop it sticking!.

Begin testing it about 2 minutes before the packet instructions say it should be done!. The best way to judge if pasta is cooked is to bite it!. This is tricky, because if you fish out a bit and stick in your mouth you may burn your mouth on the boiling water!. Wait a bit and blow on it, then bite it!. If it is hard it needs longer!. If it is chewy (or ‘al dente’, Italian for ‘to the teeth’) it is ready!. If it is soft it is overcooked!.

Drain the pasta in a sieve or colander!.

Always ‘take the pasta to the sauce’!. Put the pasta in the pan with the sauce and stir together until thoroughly coated!.

Season with the pepper!.

ADDITIONS & ALTERATIONS

Use crème fra?che instead of the cream!.

The half cream, half green mixed tagliatelle (called paglia e fieno, or ‘straw and hay’) should look really good with this sauce!. Using all green tagliatelle verdi might look a bit too green!.

TIPS

If you use enough water, add the pasta when the water is boiling, stir the pasta frequently and don’t wander off (‘Gli spaghetti amano la compagnia’, or ‘spaghetti loves company’) and don’t overcook it, adding olive oil to the water to stop it sticking is totally unnecessary!.Www@FoodAQ@Com

i don't know anything about salmon but smothered shrimp is really good and easy to make!. You should probably just grill the salmon!.

to make smothered shrimp or err prawns:

saute an onion in some oil
after the onion starts to get soft then add the shrimp
when the shrimp are done add an inch or so of water, and season with cayenne pepper, salt, black pepper and garlic!.
Chop up some potatoes and add them
cook it until the potatoes are tender!. eat it over white rice!.

really simple and really good!. this is very common new orleans cooking and you can do the same thing with chicken if you wanted!.Www@FoodAQ@Com

With the prawns, just do this - it tastes amazing:

Lightly cook some garlic in oil,
Add the prawns,
Add good amounts of salt and black pepper and a splash of lemon juice,
Stir around on medium heat,
Just before they're done - add some garam masala!.
Then serve on a bed of iceberg lettuce - beautiful!.

make fish cakes

mash some potato and leave to cool, steam to salmon for around five minutes and boil the prawns for about the same!. them flake the salmon in to the potato and add the prawns!. add one egg and mix together!.

form around 8 'cakes' and cook in the oven at about 190o for 20-25 mins or untill the cakes are crispy on the outside and cooked through - serve with salad - enjoy!Www@FoodAQ@Com

Cook the prawns and smoked salmon in a little olive oil and a clove of chopped garlic, add a tin of chopped tomatoes and a handful of herbs such as parsley and dill and some freshly ground black pepper!. Then stir all of this through some freshlty cooked pasta or spaghetti!. mmm mmmWww@FoodAQ@Com

A simple salad with feta cheese and some funky vegetables, and a really tasty dressing!. Really quick and easy, and yummmm! If you wanna make it a bit more filling you could try stirfrying them with a bit of rice and/or noodles and sauce - also delicious!.Www@FoodAQ@Com

Oh yum!. I would reccomend rice (either chicken or beef rice a roni works well, or mexican rice) with some sauteed green beens!. Or I find that salmon always goes really well with pasta!. Any pasta at all!.Www@FoodAQ@Com
