Help with nachos?!


Question: Help with nachos!?
I want to make a nice nacho cheese sauce (preferably something a little spicy)!. Anyone have any suggestions!? Not anything canned, I would really like a homemade sauce recipe if anyone has one!Www@FoodAQ@Com

Buy some jalapeno peppered jack cheese, melt it in a double boiler adding small amount of milk while stirring, do not let it come to a boil or it will stick, pour over tortilla chips while hot!. my favorite is put some refried beans over the chips, heat in microwave, then pour cheese, garnish with a salsa, top with guacamole and sour cream!. it not only looks pretty but the taste is fantastic!.Www@FoodAQ@Com

Creamy and spicy white nacho cheese sauce made with Monterey Jack cheese, cream, and peppers

Yield:
6 servings
Ingredients:
1/2 onion, chopped
1 tablespoon oil
5 cups (20 ounces) shredded Monterey Jack cheese
2/3 cup heavy whipping cream
1/2 cup chopped canned hot peppers, such as jalapeno peppers, Hungarian hot peppers, or pepperoncini peppers*
2 firm tomatoes, peeled
Tortilla chips, for serving

Instructions:
1!. Heat oil in a deep pan and saute onions for about 5 minutes or until they start to soften!.

2!. Reduce heat to low-medium low and add cheese, cream, and peppers!. Cook and stir until mixture melts and becomes a creamy sauce!.

3!. Cut tomatoes in half and scrape out the seeds; discard seeds!. Slice flesh into thin strips (about 1/4-inch wide and 1-2 inches long) and stir into sauce!.

4!. Warm tortilla chips on a tray in the oven at 350 degrees for 10 minutes or until hot!. Pour the cheese sauce into a serving dish and serve warm, with the heated chips!.

*Use peppers according to your heat preference!.

For a good cheese sauce for nachos, you can't beat theVelveeta cheese sauce!.!.!.for a pound of cheese, add 1/4 to 1/3 cup your favorite salsa and either melt the cheese over very low heat on the stove, or better yet, microwave until nearly melted and stir!.

I have tried to make a nacho cheese sauce the traditional way, making a rue out of oil and flour, then add milk and then melt cheese into it, but the flour taste still doesn't disappear even when you add slasa, and the whole thing just doesn't take on the nacho taste you get when you melt processed cheese and salsa!.Www@FoodAQ@Com

I don't have a recipe per say, use a blend of cheeses, cheddar, monetary jack, Colby and maybe a little mozzarella!. Melt on low or over boiling water with just enough milk (whole or Mil-not is best) to make it liquid!. Add cut up jalapenos, the pickled ones in a can are best, get the slices and use them like that or dice them up into smaller pieces!. Start with just a few and stir in and taste until desired heat!.
The amounts of cheese should be mostly cheddar with small amounts of the others blended in to make the cheddar more melt-able!. Use a really strong cheddar for best flavor!. Shred the cheese for quicker melting!. Add milk a little at a time until desired consistency, the amounts depend on how much sauce you want!. For large amounts of cheese, a pound or more total, use a 1/4 cup milk to start!.

Sorry, I don't know one, but I do have a favourite way to serve nachos:
* sprinkle a layer of nachos in a large deep baking dish!.
* sprinkle grated cheese over the nachos
* sprinkle salsa over the top of this
* repeat the process until you have several layers of each

It depends on what you like you can get canned hot peppers!. You can also try to adding hot sauce, we had this one it was a garlic hot suace and when mixed with ranch gave it a great kick!. cant help wit the cheese but i have some add ons to make it look nice!. cut up some spicy peppers(jalapeno, serano) anythng thta looks green and spicy!. and throw it in the sauce while its on low heat!. also add some fresh tomatos nicely diced!. just a little bit to add color to the cheese!.Www@FoodAQ@Com

you need to buy a small plastic tub first then get some chedder cheese and put it in the oven at a high tempreture till it melts then add some fruity herbs with a small sprinkle of garlic spice then pour it into the container and make sure its hot before you serve it!.Www@FoodAQ@Com

well the best cheese dip that I know of that you can make!.!.!.but nothing really home made is Rotel!. Get velveeta cheese cut it up and melt it!.!.!.get a can of Rotel diced tomatotes and thats it!. let the cheese melt, stir often so it doesnt burn!. and you can add some cooked sausage to it as well!.Www@FoodAQ@Com
