Smoked Sausage And White Bean Soup
1 pound dried navy beans, rinsed
1 tablespoon olive oil
1 pound smoked pork sausage, sliced into 1/2-inch pieces
2 cups chopped onions
1 1/2 tablespoons minced garlic
2 bay leaves
2 sprigs fresh thyme
8 cups chicken stock
3 cups water
2 teaspoons salt
1 1/2 teaspoons freshly ground black pepper
1/2 teaspoon ground cayenne pepper
Soak beans in cold water to cover, overnight (8 to12 hours)!. Drain beans and rinse well!.
In a large stockpot or Dutch oven, heat the olive oil over medium-high heat!. Add the sausage and saute for 5 to 6 minutes, or until browned!. Remove the sausage from the skillet and reserve!. Add the onions and cook 2 to 3 minutes, stirring occasionally!. Add the garlic and cook, stirring, an additional minute!.
Add the browned sausage back to the stockpot!. Stir in the beans, bay leaves, and thyme!. Add the chicken stock, water, salt, pepper, and cayenne!. Bring soup to a boil; reduce heat to a simmer and cook, partially covered for 2 1/2 to 3 hours, stirring occasionally!. Skim off any fat, as necessary, if desired!. (The cook time may vary depending on the beans, but they should be tender and falling apart when finished!.)
Adjust seasonings with salt and pepper, if needed!. Using a potato masher or the flat side of a spoon, gently mash the beans against the bottom and sides of the stockpot, leaving some of the beans whole and some mashed!. Continue to simmer the soup for 30 minutes, uncovered, or until desired consistency!.
Ladle the soup into bowls!. Serve hot, with crusty bread slices!.Www@FoodAQ@Com

Of course!. You can make what is called a sausage supper!. Brown the taters and cook the sausage add the onions to the taters while cooking and add whatever spices you want!. IF you have any milk or a can of cream of ( whatever you have ) add that to it as well!. Taste pretty good :=)Www@FoodAQ@Com
fry the onions and sausages together, boil and mash the potatoes - if you have any chives add those to the mash!. Layer them into an ovenproof dish, beginning with beans, then sausage mixture, cover with the mash and bake in the oven until brown!. Serve with gravy - yum!Www@FoodAQ@Com
I don't know anything spicy, but you can mush up the beans and cut and fry the potatos!. Then add parsley to potatoes!. The you can dip the potato chips in the bean sauce!Www@FoodAQ@Com
sure sounds to me like if you put all of that in a crock pot it would be tastey!. if you have oil the potatoes & onions fry well together!. that's putting it lightly!.!.!.!.!.fried potatoes is the best food ever :)Www@FoodAQ@Com
Have you got butter or oil of some type!? Fry up the potatoes, onions and sausage!. Add whatever seasonings you have on hand that you like!. Salt & pepper (natch), garlic!.
