You should cook the patty-pan squash until tender, while you

Saute 1 onion, chopped, in 2 Tbs butter for 2 minutes!. Then add cleaned, chopped mushrooms (3/4 to 1 carton)-- baby bellas/cremini are my favorite, but white ones will do-- and sautee until tender (about 6 min)!. Add 2-4 chopped garlic cloves a few minutes before the mushrooms are tender!. Add salt, pepper, a pinch of thyme and sage (appx 1/2 tsp of each, but more of thyme), and a splash of brandy or some sweet cooking wine (like marsala or sherry), simmer and reduce down for about 4 minutes!. Transfer to a bowl to cool!.

Simultaneously brown up sausage (any kind you like, I use Bob Evans spicy, you can use the regular but breakfast-type sausage is the way to go)!. Transfer to bow with mushrooms to cool!. Add 1/2 cup bread crumbs, 1/3 package of cream cheese-- drop into mixture in small chunks, add a generous sprinkling of parmesan cheese, and add very slight sprinkling of brown sugar!. Mix it together and fill pumpkins!.

Add more parmesan cheese on top and bake until golden brown on top and heated through (standard 350) this could take varying times depending on the size of the squash, I'd say around 20 minutes!.

I made this up myself and it is really, really, good!. When you cut up the squash and mix it in with the cheese, herbs, garlic, mushrooms, and sausage with that little bit of sweet it is delicious!. You may want to make your own special changes but this recipe is worth a tryWww@FoodAQ@Com

Hollow them out Then stuff with bread crumbs, Browned Italian sausage, ketchup of tomato sauce, diced onion, garlic powder and white pepper!. If you like things hot, add some hot sauce to the stuffing!.

I like these halved then cooked with brushed on olive oil and balsamic vinegar on the grill!. Finish with onion salt!.Www@FoodAQ@Com

I just saw them made on Food Network!.!.!.I think it was Giada DeLaurntis!. She just tossed them with olive oil, salt & pepper and baked them whole, I think!? Check foodtv!.com !.Www@FoodAQ@Com
