Question: I know you can substitute sorrel for basil in pesto but can you combine basil and sorrel for pesto!?
I actually want to know if I can add basil pesto to my sorrel recipe!. How well do you think the sorrel and basil flavors will mesh!?Www@FoodAQ@Com


Answers:
Sure as a chef to make it go further we used to add more parsley than basil and in the winter we would use dried basil and more parsley, one word of caution the sorrel will discolour fast so make it and use it fast, or it will turn black!.

Sorrel can be made into a paste, we used to buy it from France and make soups and sauce with it when I worked in Japan, Singapore and Jamaica as a sous chef for a hotel chain, but they used citric acid to keep the mossy green colour it is never going to be neon after it is cooked or even blanched!.Www@FoodAQ@Com
