Potatoes Gratin

2 pounds baking potatoes, peeled and sliced paper-thin
2 cups heavy cream
2 garlic cloves, split
Leaves from 4 fresh thyme sprigs
3 tablespoons chopped fresh chives, plus more for garnish
1 cup grated Parmigiano-Reggiano
Sea salt and freshly ground black pepper

Preheat the oven to 375 degrees F!. In a large bowl combine all the ingredients, tossing to coat!. Season with salt and pepper!. Put the potato mixture into a casserole dish, flatten it out with a spatula, and bake for 40 minutes, until the potatoes are tender and the gratin is bubbly!. Let stand for 10 minutes before serving!. Garnish with fresh chives!.Www@FoodAQ@Com

Is you want something a little ethnic, try serving it with a sofrito sauce!. You can add onions and/or lemons/limes to the sauce!. You can buy these sauces canned in the Goya section (if youhave one) in the supermarket or try these DIY:
Sofrito sauce:2 tablespoons vegetable oil
1 medium onion, chopped
1 green bell pepper, seeded and chopped
5 cloves garlic, chopped
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground cumin
1 teaspoon dried oregano, crushed
2 bay leaves
2 tomatoes, chopped (optional)
3/4 cup canned tomato sauce
