Episode: Southern Roots
1 cup all-purpose flour
2 tablespoons onion powder
2 tablespoons garlic powder
1 teaspoon cayenne
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 pork chops, 3/4-inch thick, bone-in
1/4 cup olive oil
1 cup chicken broth
1/2 cup buttermilk
Chopped fresh flat-leaf parsley, for garnish
Put the flour in a shallow platter and add the onion powder, garlic powder, cayenne, salt, and pepper; mix with a fork to distribute evenly!. Pat the pork chops dry with paper towels to remove any moisture and then dredge them in the seasoned flour; shaking off the excess!.
Heat a large saute pan or cast iron skillet over medium heat and coat with the oil!. When the oil is nice and hot, lay the pork chops in the pan in a single layer and fry for 3 minutes on each side until golden brown!. Remove the pork chops from the pan and add a little sprinkle of seasoned flour to the pan drippings!. Mix the flour into the fat to dissolve and then pour in the chicken broth in!. Let the liquid cook down for 5 minutes to reduce and thicken slightly!. Stir in the buttermilk to make a creamy gravy and return the pork chops to the pan, covering them with the sauce!. Simmer for 5 minutes until the pork is cooked through!. Season with salt and pepper and garnish with chopped parsley before servingWww@FoodAQ@Com

oh, my goodness!.!. I am not even kidding!.!.!.you HAVE TO try this!. Buy some Lawry's 30 minute marinade Baja Chipotle flavor!. It's not spicy at all!. Marinate and grill!.!.!.nothing else!. Serve with garlic/basil mashed potatoes!. I'm telling you, you won't be disappointed!. This marinade is good on other meats, but it just doesn't pop like it does on pork!. You'll never want to try another way again!
If you aren't impressed by that idea, or want something a little different, I tried this recipe (and I am not fond of sweet-tasting meat) and I thought it was pretty good and simple:
Orange Glazed Pork Chops
1/2 cup orange marmalade
2 tablespoons orange juice
2 tablespoons Dijon mustard
1 tablespoon soy sauce
1/2 teaspoon minced garlic
1/8 to 1/4 teaspoon crushed red pepper flakes
4 bone-in pork loin chops (1/2 inch thick and 8 ounces each)
1 teaspoon vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper
Flour or House Autry ? Medium Hot Breader
In a small bowl, combine the marmalade, orange juice, mustard, soy sauce, garlic and pepper flakes; set aside!. In a large skillet, cook pork chops (very lightly floured)!. Move to a baking dish and keep warm (*serving suggestion: place over a bed of prepared rice…Uncle Ben’s Mushroom flavored wild rice goes well with this dish*)!. Add marmalade mixture to the skillet; bring to a boil!. Reduce heat; simmer, uncovered, for 3-4 minutes or until thickened!. Spoon over pork chops and put in the oven at 350 for about 5-7 min!. Yield: 4 servings!.Www@FoodAQ@Com

Quick fry them in a large skillet or electric skillet and remove!. Put in a can or 2 of cream of mushroom soup and 1/2 the amount using milk instead of water!. Put the chops back in and let simmer for about 20 minutes!. Mashed potatoes or a rice or pasta side dish with a veggie and you have dinner!

Normally, we just cook ours on the grill and put some bbq sauce on them but they are hard to make inside without getting tough, I think!. What I do normally is put them in a baking dish and put ketchup on them and cover them with foil and they come out really tender!. Sometimes instead of ketchup I will used stewed tomatoes!. But any kind of canned tomatoes works!. It just makes them really tender!. It might not sound really good, but they are suprisingly good this way!.Www@FoodAQ@Com
