Saint Lucia buns - Lussekatter - Saffron buns --


Ingredients
300 ml milk
1 g saffron
50 g baker's yeast
150 g sugar
125 g butter or margarine
700 g all-purpose flour
1 egg
salt
raisin


Directions
1) Melt butter or margarine in a pan and add the milk and the saffron!.
2) Warm the mixture to 37 oC (100 oF)!.
3) Use a thermometer; the correct temperature is important!
4) Pour the mixture over the finely divided yeast; then add the remaining ingredients (except for the egg and the raisins), which should have a temperature of 21-23 oC (72-75 oF)!.
5) Mix into a smooth dough!.
6) Cover the dough with a piece of cloth and let it rise for 30 minutes!.
7) Knead the dough, divide it into 25-30 pieces and form each piece into a round bun!.
8) Let the buns rest for a few minutes, covered by a piece of cloth!.
9) Form each bun into a string, 15-20 cm long, then arrange the string in a suitable shape, e!.g!. an S or double S!. Regardless of the shape, the ends of the string should meet!.
10) Press a few raisins into the dough!.
11) Cover the"Lucia cats" with a piece of cloth and let them rise for 40 minutes!.
12) Whip the egg together with a few grains of salt, and paint the"Lucia cats" with the mixture!.
13) Bake them for 5-10 minutes in the oven at 250 oC (475 oF) until golden brownish yellow!.

Orange Buns --


Ingredients
2 tablespoons yeast
1 teaspoon sugar
1/4 cup butter
1 cup milk
1 cup orange juice
2 eggs, beaten
1 teaspoon salt
1 tablespoon orange rind, grated
1/2 cup sugar
6 cups bread flour


Directions
1) Preheat oven 375°!.
2) Proof the yeast, scald the milk, add butter, sugar and salt to it!.
3) When lukewarm, add yeast to it; mix well!. Add about 2 cups of flour and beat well!.
4) Add eggs, orange juice and peel!. Add flour, mixing well after each addition, until it pulls away from sides of bowl!.
5) Knead for about 10 minutes!. Cover and let rise until doubled!.
6) Punch dough down and, if you like, let it rise again!.
7) Divide dough into 3 balls!. Cover and let rest for 10 minutes!.
8) Make into braids or buns and rise once more!.
9) Bake until done!. You can frost with a orange icing and sprinkle some nuts if desired!.

Beer Buns --


Ingredients
2 cups Bisquick
1 egg, beaten
2 tablespoons sugar
3/4 cup beer


Directions
1) Blend all ingredients with a fork!.
2) DO NOT beat!.
3) Heat oven to 400 degrees!.
4) In 12 muffin cups put a dab of solid shortening!.
5) Place in oven for shortening to melt!.
6) When melted, remove muffin pan from oven and swirl the melted shortening in the cups!.
7) Drop batter by spoonfuls (about half full) into prepared muffin cups!.
8) Bake 12-15 minutes!.

Yucca Buns

Cooking spray
1 cup tapioca flour, plus extra for kneading
1 teaspoon baking powder
2 cups Oaxaca cheese or other fresh white cheese, such as mozzarella, finely grated
2 large egg yolks
2 to 3 tablespoons heavy cream, if necessary

Preheat the oven to 350 degrees F!. Line a baking pan with aluminum foil, and coat with nonstick cooking spray!. Set aside!.

Combine the tapioca flour and baking powder together in a large bowl!. Stir in the cheese and egg yolks!. Mix until the dough forms a ball!. Lightly flour a work surface and turn the dough out!. Knead the dough with your hands until the dough is smooth, even-textured, and not sticky!. If the dough doesn't come together or seems too stiff, then add cream, 1 tablespoon at a time, until it comes together and feels supple!.

Divide the dough into 10 even pieces and with your hands, roll each into a ball!. Shape the balls into ovals and place them 1-inch apart on the prepared baking sheet!. Bake until the rolls are pale gold (not browned), about 15 to 20 minutes!. Cool on a wire rack for 5 to 10 minutes and serve while still warm!.

Potato Buns

1 cup sugar
1 cup mashed potatoes
1/2 cup lard or shortening
3 eggs, beaten
1 1/2 teaspoon salt
1 1/2 to 2 packs yeast
1 cup warm water
5 cups flour

Mix together well the sugar, potatoes, lard, eggs, and salt!.

Dissolve the yeast in 1 cup warm water; then add that to the above mixture!.

Stir in about 3 cups flour!. Add the remaining 2 cups flour while kneading!. Knead until the dough is no longer sticky but moist!.

Let rise until doubled!.

Preheat oven to 325 degrees F!.

Roll out dough to a 3/4 to 1-inch thickness!. Cut into bun shapes with a jar or doughnut cutter (or cloverleaf or crescent-shaped cutter) and pour on greased cookie sheets about 2 inches apart!. Let them rise until puffy but not doubled (they should not be touching)!.

Brush with milk!. Bake until lightly golden brown, about 12 minutes!.Www@FoodAQ@Com
