How do you cook a medium rare ribeye steak?!
Answers:
About 20 minutes to a half-hour before cooking, take the steak out of the fridge and let it come to room temperature!.
While you're waiting, preheat the oven to 450 degrees!.
To cook on top of the stove, heat a heavy frying pan with a little olive oil until the oil starts to shimmer!.
Season the steak on both sides with salt, pepper and garlic powder!. Put it in the pan and don't move it around!. Let it stay until the steak starts to brown well!. (Adjust the heat, if it's getting too brown!.)
When the meat is browned well on one side, flip it over!.
Put the pan and meat into a 450 degree oven for 5 minutes!.
Test for doneness by touching the steak and then pressing your hand at the base of your thumb!. They should feel similar!. The firmer the meat, the more well done it is!.
Remove the meat from the pan to a plate and let it rest for 8 to 10 minutes!.
Remember, you can always cook it more but you can't uncook it!. If it's too rare when you cut into it, just put it back in the oven for a couple of minutes!.
Deglaze the pan with a pat of butter, 1 tablespoon of flour and 1/2 cup of red wine, a pinch of salt and pepper to taste!. Make a puddle of the sauce on the plate and serve the steak on top!.Www@FoodAQ@Com

Basic guideline for med-rare beef is to cook to an inside temperature of 165 degrees!. Get yourself a meat thermometer, and insert into the thickest part of the meat, not too close to any bone!. My favorite way to cook a rib-eye steak, is over charcoals!. I start by lightly brushing a thin coat of "light olive oil", then a few good pinches of kosher salt, & fresh cracked black pepper on both sides (it's all the seasoning you'll need for a rib-eye) also, without removing any fat, I make one cut!.!., basically to separate the fat strip from the "eye" so the meat wont curl up when the flames get hot!. also basic guidelines are not to turn the steak more than once!. Oh, btw, for inside grilling, I use a heavy seasoned cast-iron skillet, and follow the same procedure!. on an electric stovetop!.Www@FoodAQ@Com
