1 whole salmon, 3-4kg/6!.5-10lb in weight, gutted and cleaned
4 sprigs fresh parsley
? lemon, sliced
2 bay leaves
150ml/5fl oz dry white wine
2 tbsp vegetable oil

1!. Heat the oven to 190C/375F/Gas 5!.
2!. Take 2 large sheets of foil and place on top of each other in a roasting tin!. Spread the oil on the foil and place the salmon on top!.
3!. Put the parsley, lemon slices and bay leaves into the body cavity!. Fold the edges of the foil together but just before sealing, pour in the wine!.
4!. Bake the fish for 50-60 minutes!.
5!. Serve hot or cold!. If you want to serve it cold, allow the fish to cool in the parcel and then gently peel off the skin and garnish with thinly sliced cucumber and watercress!.Www@FoodAQ@Com

Whole Baked Salmon!.
1 4-pound whole salmon with head and tail, scaled
6 green onions, chopped
5 tablespoons fresh lemon juice
2 tablespoons olive oil
1/3 cup dry white wine
10 whole black peppercorns

Paper-thin cucumber slices
Lemon wedges
Fresh dill sprigs

Preparation Preheat oven to 325°F!. Stack 2 heavy-duty foil sheets on large baking sheet!. Place fish on foil!. Sprinkle half of green onions and 2 1/2 tablespoons lemon juice inside fish!. Drizzle remaining 2 1/2 tablespoons lemon juice over fish!. Drizzle oil over!. Pour wine over; sprinkle with peppercorns!. Sprinkle remaining green onions around fish!. Bring up foil around fish, sealing tightly but leaving airspace between fish and foil!. Bake fish 1 hour!. Remove from oven!. Open foil and let fish cool 1 hour!. Reseal foil and refrigerate until cold, about 4 hours!. (Can be prepared 1 day ahead!. Keep refrigerated!.)
Open foil!. Carefully remove skin from fish!. Scrape off any grayish flesh!. Transfer fish to platter!. Garnish top of fish with cucumber slices!. Surround with lemon wedges and dill sprigs!.Www@FoodAQ@Com

DIRECTIONS

In a small bowl, stir together soy sauce, brown sugar, water, and vegetable oil until sugar is dissolved!. Place fish in a large resealable plastic bag with the soy sauce mixture, seal, and turn to coat!. Refrigerate for at least 2 hours!.
Preheat grill for medium heat!.

I have had great experiences "cooking" whole salmon in the dishwasher!. Yes, I said dishwasher!. Just put what ever seasoning or spices you want on the fish and double wrap it in aluminum foil!. Place the fish on the top rack of an empty dishwasher and make sure you allow it to run through the drying cycle!. Viola, you fish is done and ready to serve!. Do not put and dishwasher detergent in the machine while you are cooking your fish, but you can pour a cup of white vinegar in the bottom of the dishwasher and it will clean your hoses and machine while you are cooking your fish!.Www@FoodAQ@Com

You will need:
1/4 cup lemon juice
4 tbs!. butter or margarine
3 tbs!.pepper

Rinse salmon!. Place a sheet of tinfoil on cookie sheet or broiler pan!. place salmon on tin foil!. Sprinkle with lemon juice,and pepper!. Dot butter on salmon!. Take another sheet of tin foil and place over top of salmon!. Fold bottom and top edges together making a packet!.
Cook for about 35-45 minutes on 375!.

Place salmon on serving dish!. whip 1/4 of a cup of butter!. Use a butter Knife and carefully dot around the edge of the serving dish!. Sprinkle edge with pepper or thyme!. Serve!.Www@FoodAQ@Com

Never cooked a whole salmon at once although my mother did!. You garnish it with onions (any kind) or leeks, carrots, and maybe parsley, tarragon, lemon pepper, or freshly ground pepper and add lemon!. I serve it with potato either baked, white or yams!. You can put the yams in the microwave in a potato cover (7 min!. a piece for average size)!. also, goes good with snow peas or any kind of peas!. I either bake it or steam cook it!. Light sour cream is good on the potatoes and with the salmon---you can use onion salt and pepper in it!. I use sea salt and freshing ground pepper!. Hope this helps!. Decorate the serving plate with thin slices of lemon, sprigs of dill and parsley!.

Rubb the salmon with a little EVOO and sprinkle fresh dill on it!. Then lay slices of lemon on top!. Bake, covered until it is opaque (sp!?)!.Www@FoodAQ@Com
