Pickling brine for hot peppers?!
i gave my grampa several hot pepper plants to grow this year!. he absolutely loves them but wants to pickle them because the plants are producing so many they're going bad before they are eaten!. i have found a few pickling recipes on the internet but he didn't care for them!. does anyone have any GOOD pickling recipes for hot peppers!?!?!?Www@FoodAQ@Com

My father grows jalapenos and my husband grows habeneros so I have had to deal with lots of peppers before!.!.!.did you know that you can just wash them, let them dry thoroughly and put them in a freezer bag and freeze them!? Then when you need one for a recipe you just take a pepper out and let it thaw partially and chop, adding it to whatever you are making!.!.!.
To pickle the peppers my husband likes to slice them thinly and make a sweet brine of white vinegar, salt, sugar and whole mustard seed and a few cloves of garlic!.!.!.this will keep in the refrigerator for a few months without canning!.!.!.!.

To pickle the peppers my husband likes to slice them thinly and make a sweet brine of white vinegar, salt, sugar and whole mustard seed and a few cloves of garlic!.!.!.this will keep in the refrigerator for a few months without canning!.!.!.!.

I am a former chef and have used a simple water, vinegar, salt and spice wise a few bay leaves, mustard seeds or peppercorn in the brine!.
I recommend as the skin on peppers is quite strong and tough to make a few tiny slits/pierce with a small knife, so the pickle with penetrate the peppers and go all the way threw, and they will not bob in the brine when adding it after a few days the settle once they have gotten a good soak!.
You can use this for whole peppers, slices, or you can top them by cutting a of the the stem end and a bit off the bottom tip to fully immerse them in the brine!.Www@FoodAQ@Com
