OATMEAL RAISIN DROPS
2 1/2 DOZ COOKIES

1 cup butter, softened
1 cup sugar
1/2 cup brown sugar, firmly packed
2 eggs
1 tsp vanilla
2 cups flour
1 tsp salt
1 tsp baking soda
1 1/2 cup oats
1 1/4 cup raisins
Preheat oven to 375
Cream together, sugars, eggs, and vanilla
Stir in flour, salt, baking soda, and oats
Mix well
Stir in the raisins
Drop by tablespoons on a lightly greased cookie sheet
Bake for 10 min
Remove to cool



Chocolate Chip Oatmeal Walnut Bars



1 cup butter, softened
3/4 cup packed brown sugar
1/2 cup sugar
2 teaspoons vanilla
2 eggs
1 1/4 cups old - fashioned rolled oats
1 cup whole wheat flour
1/4 cup all - purpose flour
1 teaspoon baking soda
Dash salt
1 (12 - oz!.) pkg!. chocolate chips
1 1/2 cups chopped walnuts, toasted*


Heat oven to 375 degrees F!. In large bowl, beat butter at medium speed until
soft and smooth!. Add brown sugar, sugar and vanilla; blend well!. Add eggs
one at a time, beating well after each addition!.
In medium bowl, combine oats, whole wheat flour, all - purpose flour, baking
soda and salt; mix well!.
Slowly add flour mixture to butter mixture, beating until well blended!. Stir
in chocolate chips and walnuts!. Spoon and spread dough in ungreased
15x10x1 - inch pan!.
Bake 15 to 20 minutes or until golden brown; cool on wire rack!.
TIP *To toast nuts, spread on baking sheet; bake at 375 degrees F for 7 to
10 minutes or until lightly browned!. Cool!.

OATMEAL CAKE

1 c!. oatmeal
1 1/2 c!. boiling water
1 c!. white sugar
1 c!. brown sugar
1/2 c!. shortening
2 eggs
1 tsp!. vanilla
1/2 tsp!. salt
1 tsp!. cinnamon
1 tsp!. soda
1 1/2 c!. flour

Pour boiling water over oatmeal and set aside to cool!. Meanwhile, cream together white sugar, brown sugar, and shortening!. Add eggs, vanilla, salt, cinnamon, soda, and flour!. Last of all, stir in cooled oatmeal-water!. Bake at 350 degrees for 35 minutes in a 13 x 9 inch pan!.

FROSTING FOR OATMEAL CAKE:

1/3 c!. soft butter
3 c!. powdered sugar
1 1/2 tsp!. vanilla
3 tbsp!. milk (or a little more)

Cream together soft butter, powdered sugar and vanilla!. Add milk to desired consistency!. Spread over cooled cake!.



Banana Oatmeal Cake Recipe
Heat oven to 350°F

Grease rectangular pan with shortening or cooking spray!.

Beat in a large bowl:

1 1/2 cups mashed very ripe bananas, (4 medium)
3/4 cup sugar
2/3 cup vegetable
2/3 cup buttermilk
1 tsp!. vanilla
1 large egg

Mix in-------------------

1 1/3 cups all-purpose flour
1 cup quick cooking or regular oats
2 tsps!. baking soda
1 1/2 tsps!. ground cinnamon
1 tsp!. baking powder
1/2 tsp!. ground cloves

Stir in-----------------

2/3 cup chopped nuts
2/3 cup raisins

Bake 30 to 35 minutes or until toothpick inserted in center comes out clean!. Cool completely!. If you like, sprinkle with powdered sugar!.




Apple Oatmeal Crisp Recipe
Ingredients

3-4 med!. Tart applies, cored, peeled and sliced
3/4 cup rolled oats
3/4 cup packed brown sugar
1/2 cup flour
1 tsp cinnamon
1/2 cupbutter
Directions


Spread apples in a greased 9" Pie plate, set aside!.
Mix rest of ingredients with fork or pastry blender!.
Sprinkle over apples!.
Bake 350°F for 35-45 minutes or until apples are tender and top is crisp and brown!.
Comments
Serve warm topped with ice cream or whipped cream!.






Banana Oatmeal Pancakes Recipe
4 servings

1 cup flour
2 tablespoons quick cooking oatmeal
2 teaspoons baking powder
1/4 teaspoon cinnamon
1 1/4 cup nonfat milk
1 tablespoon oil
2 tablespoons pure maple syrup
2 egg whites
1 cup sliced banana

In large bowl combine dry ingredients!. Stir until blended!. In separate bowl combine milk, oil, syrup and egg whites!. Whisk until blended!. Pour liquid ingredients over dry ingredients!. Mix until blended (batter will be lumpy)!. If too thick, add a little more milk!. Brush griddle with oil lightly!. Heat griddle over medium-high heat!. Spoon 1/4 cup of batter onto hot griddle!. Cook just until a few bubbles begin to appear!. Arrange 4 banana slices on pancake and turn!. Continue to cook until bottoms are golden!. Turn carefully and cook until other side is golden!. Serve with maple syrup!.

Raisins and cinnamon in the oatmeal!. I like boiled wienies with oatmeal!. boil first, then chop up to add!. Use regular milk after cooking to add to it!. If you don't mind gaining a few ounces, use half and half!. I use 1% milk but like it better the other way!.

Good served with fresh chunky applesauce too! Add cinnamon and a little nutmeg to it while cooking!. Can add the raisins to the applesauce instead of the oatmeal, or add chopped apples to oatmeal, but tried that and it didn't worked out too well!. If you want to do that, make sure the apples are finely chopped!. You could even put the applesauce at the bottom of the oatmeal to serve that way after cooking both separately!.
