Are there still nutrients in overcooked steamed vegetables?!


Question: Are there still nutrients in overcooked steamed vegetables!?
I have one of those steamer-bowl things that you put in the pot of water and I just put some water at the bottom of the pot and set it to med!. Sometimes I like them a little crunchy because I feel like more of the enzymes and vitamins haven't been "steamed out" or "cooked out" but sometimes they come out really cooked and when I eat them they just fall apart in my mouth!. When they are at that point are all the good enzymes and vitamins all gone!?!? Can all the good nutrients be "cooked out!?" Like when you boil it!?Www@FoodAQ@Com

There are still nutrients left!. Steaming doesn't leach the nutrients out like boiling does!. You have less than raw vegetables, but a lot more than overcooked boiled vegs!.Www@FoodAQ@Com

All the nutrients are not cooked out, but they are not very good mushy!. Raw veggies will always be more nutritious!. If you like your vegetables soft!. Try pureeing some of them while they are only slightly steam and still have a bit of a crunch and add it to the sauce!. Pureed spinach (doesn't have to be cooked) or asparagus are really good mixed with tomato sauce!. Then your veggies are softer but you are still getting some more of the natural nutrients!.Www@FoodAQ@Com
