You can easily replace the egg in any baked good with ground flax seed!. Just mix a couple of tablespoons of ground flax (grind in coffee grinder or blender) with a 1/2 cup of warm water-cover it, and let it gel for about 5 minutes-it will be the exact consistancy of an egg!. I am allergic to eggs and use this for all of my baked goods, including gluten free breads and muffins!. Good luck! You can also use applesauce with a tsp of oil for an egg sub!.Www@FoodAQ@Com
on the site just scroll down and choose a muffin but read the Ingredients most of the muffins on that list dont use eggs
