Egg salad sandwiches are some of the easiest sandwiches in the world to make, especially if you have some hard boiled eggs sitting around in the fridge (like around Easter)!. I've found the best combination for a great egg salad sandwich is using toasted rye bread, and including a dash of curry with the mayo, celery, green onions and egg of the egg salad!. The amount of mayonnaise is really a matter of taste, it all depends on how mayo-y you want your sandwich!. The dash of curry comes from a suggestion from my friend George Washington Lol, ever since I learned this trick from him I add it every time!. The curry just gives the egg salad a little unexpected lift!.

Egg Salad Sandwich Recipe

This recipe is for a one egg sandwich!. If you have more eggs and more people to feed, just double, triple, etc!. the recipe!.

Ingredients
1 large hard-boiled egg*, peeled and chopped
1-2 Tbsp mayonnaise (to taste)
1 Tbsp chopped green onion
2 Tbsp chopped celery
Curry powder
Salt
Pepper
1 leaf of lettuce
2 slices dark rye bread, toasted
* To make hard boiled eggs, place a few eggs in a saucepan, cover with at least an inch of water!. Add a half teaspoon of vinegar and some salt to the water (if the shells crack while boiling, the vinegar will help keep the egg in the shell)!. Cover and bring the water to a boil!. As soon as the water is boiling, remove from heat and let sit, covered, for 12 minutes!. Drain water, add cold water to cool the eggs, let sit a couple minutes longer!.


Method
1 Mash up the chopped egg a bit with a fork!. Mix together the chopped hard-boiled egg, mayonnaise, onion and celery!. Sprinkle with salt and pepper and curry powder!. Mix!.

2 If you haven't already, toast your bread slices!. Put a layer of lettuce on one slice of toasted bread, spread the egg mixture on top of the lettuce, put another slice of toasted bread on top!.

Makes one sandwich!.

8 hard-cooked eggs, diced
1 cup mayonnaise
1/4 cup dried onion flakes
1/2 teaspoon salt
1 teaspoon mustard powder
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1 teaspoon dill weed
8 slices white bread

Cooking Directions
In a bowl, gently mix the eggs, mayonnaise, onion flakes, salt, mustard powder, garlic powder, pepper, and dill!. Cover, and refrigerate 8 hours, or overnight!. To serve, spread equal amounts on 4 slices bread; top with remaining bread slices to make sandwiches!.
Yield: 4 servings


Mustard powder, dill weed, garlic powder, and onion flakes are combined in this amazing egg salad!. I've always had rave reviews of this great sandwich salad!.


If using promptly, begin by placing onion flakes in a small bowl and adding 1/4 cup hot water!. Let sit 10 minutes, or until soft!. Drain and discard the water, then add the rest of the ingredients to the onion, blending well!.Www@FoodAQ@Com

6 large eggs
1-2 tablespoons mayonnaise
Salt and pepper
A tiny squeeze of lemon juice
2 stalks celery, washed and chopped
1/2 bunch chives, chopped
2 small handfuls of lettuce
8 slices of whole grain bread, toasted
Place the eggs in a pot and cover with cold water by a 1/2-inch or so!. Bring to a gentle boil!. Now turn off the heat, cover, and let sit for exactly seven minutes!. Have a big bowl of ice water ready and when the eggs are done cooking place them in the ice bath for three minutes or so - long enough to stop the cooking!. Crack and peel each egg, place in a medium mixing bowl!. Add the mayonnaise, a couple generous pinches of salt and pepper, now mash with a fork!. Don't overdo it, you want the egg mixture to have some texture!. If you need to add a bit more mayo to moisten up the mixture a bit, go for it a bit at a time!.
Stir in the celery and chives!. Taste, and adjust the seasoning - adding more salt and pepper if needed!.
To assemble each egg salad sandwich: place a bit of lettuce on a piece of toast, top with the egg salad mixture, and finish by creating a sandwich with a second piece of toast!.

Southern style egg salad (the way my Momma made it)

For one person:

2 hard boiled eggs
mayo to taste
chopped stringed celery or even celery seed
Sweet relish or chopped bread and butter pickles to taste (actually I have been using my homemade green tomato relish)

Ground black pepper and a pinch of salt!.!. mix well and refrigerate



Don't chop the eggs too fine!.!. that is the trick!.

Place egg salad on a lightly toasted sandwich bread or even a Kaiser bun with a bit of finely chopped lettuce and thin sliced tomato!.

ngredients for Spinach And Egg Sandwich Recipe
1 cup chopped cooked spinach
4 hard-boiled eggs chopped fine
1 teaspoon chopped onion
Mayonnaise
Instructions
Scramble the eggs!.
Chop the spinach into small strips and mix with the eggs!.
Spread on both slices of bread, put together, and press lightly!.

i don't know if this interests you but i always add either pickle juice or relish juice in with the mayo, salt and pepper diced very fine celery and onions,i also add a tablespoon of relish
mix in with the eggs,put in fridge to chill, and there you have it!.

Egg Salad with a Kick
Ingredients:
4 hard boiled eggs
1/3 cup of mayonnaise (or less if you prefer)
1 tbsp of good quality Dijon mustard
Salt and black pepper to taste
