A large baker potato for each person!. 8 mins microwave on high for each one!. Then rub the skin down with olive oil!. Then oven for 30 minutes at 425!. Remove, cut in half the long way, scoop out the inside, leaving about 1/2 inch of flesh in the shell!. Put in a bowl (this is for 2 potatoes) add 1/2 cup shredded cheddar, 1/4 cup real bacon bits, sour cream and butter!. Throw in a chopped green onion!. Then mash coarsely with a fork!. Fill the shells, and bake for 10 more minutes!.

8 medium Idaho potatoes (8 to 10 ounces each), scrubbed and patted dry
2 tablespoons olive oil
3 tablespoons unsalted butter
1 pound beef tenderloin, trimmed, and cut into 1/4-inch pieces
1/3 cup diced sweet onion, such as Vidalia or Maui
1 tablespoon finely chopped garlic
5 tablespoons seasoned rice vinegar
1/4 teaspoon salt
pinch of herbes de Provence
pinch of white pepper
1/3 cup heavy cream
6 ounces crumbled goat cheese
1/4 cup seasoned bread crumbs
DIRECTIONS:
Preheat an oven to 400°F!.
Place the potatoes in a bowl and lightly coat with the oil!. Transfer to a sheet pan with enough room between the potatoes so they are not touching!. Bake for 40 to 45 minutes, or until they easily collapse when squeezed!.
Remove the potatoes from the oven and decrease the oven temperature to 325oF!. Cut each potato in half lengthwise!. Scoop out the all the cooked potato except for 1/8 of an inch around the potato shell and transfer to a bowl!. Set aside!. Return the potato shells to the sheet pan and set aside!.
Heat a large sauté pan over high heat until slightly smoking!. Add the butter and when completely melted, add the beef, onions and garlic!. Sauté until the edges of the beef have slightly caramelized and the onions are translucent and beginning to change color!.
Add the vinegar, salt, herbes de Provence, and pepper and cook until the liquid has completely evaporated!.
Mash the potatoes until smooth!. Pour in the cream, add the beef mixture, adjust the seasoning and mix to completely incorporate!. Evenly distribute the mixture back into the baked potato shells!. Top with the goat cheese and sprinkle with the bread crumbs!. Return the potatoes to the oven and bake for 15 to 20 minutes until the cheese-crumb topping is lightly toasted!. I like potatoes just about any way you want to fix them, but here's my "in a hurry recipe!."

Put in microwave and cook about 5 minutes!. You want them partially cooked!.
Cut potatoes in half along the score line!.
Use a paring knife to make cross cuts in the potato halves (unpeeled side up)!.
Heat olive oil and butter in a large skillet!.
Sprinkle garlic salt and pepper on potatoes and put them cut side down in the skillet!. Cook until the tops are slightly browned!. 5 min
Turn the potatoes and cook 7 minutes more until the skins crisp a bit and the potatoes are cooked through!.

10-15 (medium size) red and white potatoes!.
1/2 cup diced small, green onions
1/2 cup diced small, celery
1/2 cup diced small, vidalia onion
1/2 cup diced small, bell pepper
3-4 T!. sweet relish
8-10 oz!. real mayo
1/2 T!. yellow mustard
1 t!. garlic powder
1 T!. bacon bits
salt and pepper to your own taste
Start by washing and dicing potatoes with skin on!. Then put them in a large pot and boil in salted water!. While they are boiling, dice your veggies and gather spices/seasonings!. After the potatoes get to be fork tender, drain them and pour them back in the warm pot with lid off so they will dry before you add the mayo, or else the
mayo will become watery!.
After the potatoes have had a chance to dry, mix in veggies, mayo, relish, mustard, salt, pepper, bacon bits and garlic powder!. Mix well and chill!.
Serves 20-30 ppl!.

2 lb!. frozen, cubed hash browns
1/2 cup butter
1 can cream soup
1 cup sour cream
1 cup milk
8 oz!. shredded Cheddar
1 tsp!. salt
1/2 tsp!. pepper
Mix all ingredients well and spread into casserole!. Bake at 350°F for 1-1 1/2 hours or until bubbly and browned!.

3 tablespoons butter or spread
1/2 teaspoon garlic powder
1/4 cup bbq sauce
2 tablespoon vinegar

Cut potatoes and cook in boiling water until tender!. Mix BBQ sauce with Vinegar!.
Drain potatoes, and place in large bowl with butter or spread and BBQ sauce mixture!. Mix to desired consistancy, then fold in garlic powder and cheese!. Enjoy!
