Question: When cooking, what do I do if the taste of the food becomes too hot/spicy!?
Is there anything I can add or do to make the food less spicy, without altering the taste too much (except for reduced spiciness)!.Www@FoodAQ@Com

Realistically, the only thing that will cut the heat are the lactic acids and milk fats in dairy products!.

One poster said use lemon, which stops the heat (a byproduct of a chemical called capsaicin, the primary ingredient in pepper spray) from binding to your tongue!. This not quite correct, as the lemon juice uses many of the same tastebuds, and tends to mask or overpower the heat!. Asian cooking (especially Thai) use citrus fruits to enhance flavour, but they can still be damned hot!.

Depending on the dish, sometimes all it will take is a dollop of sour cream, yogurt, or a touch of cream, milk or cheese to reduce the heat!. Fats and acids present in milk products are the only ones that will coat taste buds, and reduce heat effectively!. However, consuming plain or buttered bread with the meal will also reduce heat!.

I'm sure you don't have to be told to not drink water with spicy food, as this will aggrivate the "hot" symptons, by spreading the spicy oils througout your mouth!. Always remember that the Brits developed their IPA (India Pale Ales) to combat the heat of the country, as well as the heat of the food!. :D Or, alternatively, you could be boring, and drink Milk, or as one poster suggested, Chai!.Www@FoodAQ@Com

Usually, there isn't much you can do without altering the taste!.

In some cases, you can:

For soups, you can add more water/stock, and re-season without the spicy seasoning!.
For chili, you can add beans and cook an additional hour on very low heat!.
For recipes with some dairy content already, you can add more dairy product!.

But please note that none of these is very effective if you made the food very much too spicy!.Www@FoodAQ@Com

depends on what you are cooking!. usually if you add more of the main but bland ingredient (s) then you can reduce the spiciness of the dish!. for example, if you are cooking chili add mroe beans and meat and the amount of spice will be distributed!.

I have heard of adding potato to take out spice but be sure to remove the potatoWww@FoodAQ@Com

I am not an expert in cooking but I think this may help!. Well, if somethings really spicy or hot the best thing to eat is bread!. The best thing to drink is milk!. You could also try putting in some lemon juice!. I really dont know how it works but it works for me!. I do it all the time and it works!. :)

That's a tough one!.
Is it mexican food!? Make a big jug of horchata, using whole milk!. Drinking the fatty milk will keep your mouth from feeling the full effect of the heat!.

Is it indian food!? Make a big batch of iced coffee or iced chai!.!.!.!.with whole milk instead of water or lowfat milk!. same reason!.Www@FoodAQ@Com

What I always do to conteract the spicy is to add a little sugar!. Or if it's a sauce or soup you can add a whole carrot and let it simmer!. The carrot will draw out the spicy taste!.Www@FoodAQ@Com

The best way to neutralize extreme heat is with lemon juice!. The lemon juice will prevent most of the capsicum from bonding to your tongue!. This will give you the zing and let the heat disipate fairly rapidly!.Www@FoodAQ@Com
