Need help with a ham dumpling recipe...?!
My grandmother used to make the best country ham dumplings!. I grew up in rural North Carolina, so I am looking for southern style dumplings!. Grandma's dumplings were always a rich, creamy, broth with little chunks of ham and small, round, almost chewy dumplings!. I remember watching her make dumplings, whether chicken or ham, and never remember seeing her roll out the dumplings, She would just drop them into the pot!. She didn't add extra vegetables to the dish!. I also don't remember seeing her use a "stock"- she usually just used water and flavored it with the meat!. If anyone has heard of this dish and has any idea how to make it, I would appreciate the help!. My husband thinks I am crazy when I talk about ham dumplings, having only had chicken dumplings!. Boiling the meat makes the broth!. For the sort of 'chewy' dumplings you remember, use flour, baking powder, and water !.!.!. stir until 'lumpy' and drop by spoonfuls onto the top of the meat in the pan !.!.!. the flour in the dumplings is what makes the broth 'creamy' !.!.!. and you are NOT crazy !.!.!. ham and dumplings is a very 'southern' dish, and your husband is in for a treat!Www@FoodAQ@Com
Ham dumplings
2 cups self raising flour
3/4 cup milk
1 tbsp butter
3 tsps baking powder
salt
mix all into ball
divide into 8 portions
roll each portion into a ball and place ham or bacon inside
drop into casserole
Cook with lid on until big and fluffy
No extra thickening is required because dumplings will do it for you!.
