Question: My homemade biscuits are horrid!!?
The other night I made chicken and dumplings and wanted to make a nice and fluffy biscuit to enjoy with dinner!. They were horrible!. Did not have a horrid taste!.!.!.just texture!. They were dense and chewy!. Please please, anyone know a good recipe!? I have leftovers and would love to have biscuits with it!.Www@FoodAQ@Com

Southern Style Cat-head Biscuits

2 cups self-rising flour
1 T baking powder
1/3 cup shortening (she used solid crisco, I use canola oil)
3/4 c buttermilk

Mix just until blended and turn out on floured surface!. Dust top with flour and pat to desired thickness!. Do not kneed or roll! Cut out with large biscuit cutter OR large can ring!. Bake at 425 until lightly golden!.

She (grandmother) said the secret was to handle the dough as little as possible!. Sometimes she would squeeze off the dough and pat it out individually, never using a cutter at all!. She would brush the top with bacon grease or butter sometimes!.Www@FoodAQ@Com

HARDEE BISCUITS

4 c!. self rising flour
1 tbsp!. baking powder
1 tbsp!. sugar
2/3 c!. Crisco
2 c!. buttermilk

Mix ingredients together!. Do not knead dough!. Roll out 1 inch thick on floured board or cloth!. Cut out!. Brush tops with buttermilk!. Bake at 400 degrees for 15 to 20 minutes!. Nice and brown






KFC Kentucky Biscuits




1 1/2 cups all-purpose flour
1 1/2 teaspoons salt
1 tablespoon granulated sugar
1 tablespoon baking powder
2/3 cup milk
1/3 cup vegetable shortening

Preheat oven to 425 degrees F!.

Sift together flour, salt, sugar and baking powder into mixing bowl!. Make a well in the flour mix and add the milk!. Add shortening and begin kneading with hands (to cut in) the vegetable shortening and flour in the milk until thoroughly mixed!. Add milk, if needed to form, and mix!. Turn onto floured board, and knead gently 6 to 8 times!. Pat dough to 1/2-inch thickness!. Cut into biscuits!. Place on baking sheet and brown in oven 10 to 13 minutes!.

* 1/4 cup White chocolate; chop coarse
* 1/4 cup Semisweet chocoate; chop
* 1/4 cup Pecan halves; chopped
* 1/4 cup Walnuts; chop coarse
* 1/4 cup Chocolate covered almonds; cut in half
* 4 oz Unsweetened chocolate
* 1 cup Milk
* 2 Large Eggs
* 1 cup Sugar
* 1 cup Heavy or whipping cream
* 1 teas Vanilla extract
* 1/2 teas Salt


Directions

1!. Combine the coarsely chopped chocolate, pecans, walnuts and chocolate
2!. covered almonds in a bowl, cover and refrigerate!. Melt the unsweetened
3!. chocolate in the top of a double boiler over hot, not boiling water!.
4!. Whisk in the milk, a little at a time, and heat, stirring constantly,

7!. time, then continue whisking until completely blended, about 1 minute more!.
8!. Add the cream, vanilla and salt and whisk to blend!. Pour the chocolate
9!. mixture into the cream mixture and blend!. Cover and refrigerate until cold,
10!. about 1?3 hours, depending on your refrigerator!. Transfer the cream mixture
11!. to an ice cream maker and freeze following the manufacturer's instructions!.
12!. After the ice cream stiffens (about 2 minutes before it is done), add the

When you add the liquid ingred!. to the dry ingred!., don't overmix it!. Knead gently 10-12 times, roll and cut or drop by tbsps!.!. Your recipe is probably fine, it's the method that needs changing!.Www@FoodAQ@Com

most recipes are good, i find that its best to mix all by hand,1st all dry ingreadents, then crisco,put in all liquide fold gentley if very wet ,ad flour as your rolling them I won awards with betty crocker recipe!.Www@FoodAQ@Com

The best way to make good biscuits are to just buy a box of Bisquick!!! And follow their recipe,it works great in chiccen&dumplings!!! I dont think it is cheating!!! I do it this way&my family loves it!!!!Www@FoodAQ@Com

I used to make HORRIBLE biscuits they could have been used as the next secret weapon in war lol My mother had gave me her recipe and i followed it step by step and still missiles!. My fiance's mother told me to try Hudson Cream flour and by george it works! It is all in the flour! I swear by Hudson Cream now!. My moms recipe is !.!.!.!.!.!.!. 2 cups flour, 1/3 cup shortening, 3/4 cup milk!. blend shortening into flour add milk and form into a ball!. knead 4 or 5 times roll 1/2 in thick and cut out!. don't forget to put melted shortening into the pan about 1/8 in deep and when you put the biscuits in the pan coat them really well with the melted shortening!.
