What do I need to make red beans & rice with smoked sausage using Zatarains?!

From scratch!? I'm cajun this is how we do it!
First pick a really good smoked sausage, andouille is what your suppose to use, but you can't get that everywhere!. You need dried small red beans, not kidney or pinto or any other kind!. You can use canned beans if you are in a hurry! Canned tomatoes, red onions, bell pepper, garlic cloves minced, **celery, parsley,green onions, good thick bacon diced & a hand full of diced ham!. also some salt, pepper, spoon of sugar(2 if its a big pot) & hot sauce, some folks like chow chow or relish on the side, we like squash relish!. Then the secret is in the roux! Flour & oil, probably 1 cup flour & 3/4 cup oil!. Brown slowly till like dark chocolate, don not burn and stir it constantly could take 30 or mor minutes!. Cook it on med, low!!! Pick, wash & soak your beans!. Then cook following directions on the back of the sack in a large good heavy dutch oven, till just firm about 3/4 of the way done!. That is gonna take hours!. (Or soak over night if you choose to soak them and have planned ahead!.) You need to take 1/2 the juice out and set aside for now!. Put your sausage on a cookie sheet in the oven and cook 400 for 10 minutes to degrease!. Or brown in a seperate skillet! When they are done, that's when you make the roux, in a good heavy iron skillet, when completely brown, throw your diced onions in there, the smell is to die for!!! Pour some cold water in there slowly & stirring!. Not much just get it thin enough to stir!. Pour that back in to bean pot, Now add your can of tomatoes, spoons of sugar, bell pepper, garlic cloves minced, **celery, parsley, hand full of diced ham, browned sausage(cut in 1 " pieces) & ladel your beans in there, not the juice or it will be to thin!. Bring to boil, now black pepper & seasoning, don't add salt yet till you see how the seasoning is!. When it boils you can tell how thick it is you may need to add more bean juice!. Turn low, simmer for 45 min to an hour, till beans are tender, when done put a hand full of green onions in and stir!. Serve on hot cooked rice(we like brown rice)!. If you want a real cajun flavor, add 2 or 3 drops of liquid zatarans crab boil in there!.!.don't tell anybody!!! Everybody adds hot sauce if they want it!Www@FoodAQ@Com

Zatarains is great when your in a hurry but it is just as easy to make from scratch!. Recipes are everywhere on the internet but if you want a quick and easy one just let me know!. I wouldn't assume to tell you how!.Www@FoodAQ@Com
