Egg & Sausage Casserole

5 ounces turkey breakfast sausage (4 small links), casings removed
1 teaspoon canola oil
1 onion, chopped
1 red bell pepper, chopped
4 large eggs
4 large egg whites
2 1/2 cups low-fat milk
1 teaspoon dry mustard
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
2/3 cup shredded extra-sharp Cheddar cheese, divided
10 slices white bread, crusts removed

Coat a 9-by-13-inch baking dish with cooking spray!.
Cook sausage in a skillet over medium heat, crumbling with a fork, until browned!. Transfer to a bowl!.

Add oil, onion and bell pepper to skillet; cook, stirring occasionally, until vegetables soften, about 5 minutes!. Add sausage and cook, stirring, until vegetables begin to brown, about 5 minutes more!. Remove from heat and set aside!.

Whisk eggs and egg whites in a large bowl until blended!. Whisk in milk, mustard, salt and pepper!. Stir in 1/3 cup Cheddar!.

Arrange bread in a single layer in prepared baking dish!. Pour egg mixture over bread and top with reserved vegetables and sausage!. Sprinkle with remaining 1/3 cup Cheddar!. Cover with plastic wrap and refrigerate for at least 5 hours or overnight!.

Preheat oven to 350°F!.

Bake casserole, uncovered, until set and puffed, 40 to 50 minutes!. Serve hot!.


Cast Iron Home Fries

2 pounds new red potatoes, cooked until tender and halved
1 Spanish onion, peeled and cut into 1/4-inch thick slices
1 red bell pepper
1 yellow bell pepper
2 jalapeno chiles
Vegetable oil
Salt and freshly ground pepper
2 tablespoons butter

Heat grill to high!. Brush potatoes halves, onion slices, peppers, and chiles with oil and season with salt and pepper, to taste!. Grill potatoes and onions for 2 to 3 minutes per side or until just cooked through and slightly charred!. Remove from heat, cut each potato half in half again, and finely chop the onions!.

Grill peppers and chiles until charred on all sides!. Remove from the grill, place in a bowl, cover, and let steam for 5 minutes!. Remove skin and finely dice!.

Melt butter in a 9-inch cast iron skillet on the grates of the grill!. Add the potatoes, onions, peppers, and chiles all in 1 layer and pack down!. Cook until crisp and nicely browned!.


Blueberries with Lemon Cream

4 ounces reduced-fat cream cheese (Neufchatel)
3/4 cup low-fat vanilla yogurt
1 teaspoon honey
2 teaspoons freshly grated lemon zest
2 cups fresh blueberries

Using a fork, break up cream cheese in a medium bowl!. Drain off any liquid from the yogurt; add yogurt to the bowl along with honey!. Using an electric mixer, beat at high speed until light and creamy!. Stir in lemon zest!.

Layer the lemon cream and blueberries in dessert dishes or wineglasses!. If not serving immediately, cover and refrigerate for up to 8 hours!.Www@FoodAQ@Com

I make myself a great breakfast which I saw in a detox book, which I modified slightly, that keeps me full until lunchtime!.

Mix 30g porridge oats with 2 dessert spoons of natural yogurt, add a drizzle of honey!. Then add some nuts and seeds (only a small handful) then grate a small eating apple and add that!. I sometimes also add frozen berries too!. Then loosen it up with a little [soy] milk!.

Then I leave it for a while (you can make it overnight and leave in the refrigerator)!. The porridge will expand and you're left with a hearty bowl of cereal, fruit and nuts!. Once you've tried it you can make your own combinations!. As long as you don't go mad, it's very healthy and the slow-releasing energy in the porridge will keep you fuller for longer!.

BREAKFAST BURRITO

1/2 lb!. smoked sausage, cubed
1 med!. onion, diced
1 med!. bell pepper, diced
1 tomato, diced
1 tbsp!. garlic, minced
1/2 tsp Greek seasoning
8 oz!. shredded cheddar cheese
4 eggs
8 10" flour tortillas

Sauté all ingredients except eggs and cheese on medium high heat for 10 minutes!. Add eggs; cook until eggs are done!. Wrap in flour tortillas and add cheese!.

Fold and top with picante sauce!.

FRENCH TOAST

Buy the Texas Toast, thick slices,
mix 4 eggs, and 1/4 cup of milk untill frothy!. add 1/2 tsp vanilla and 1/2 tsp ground cinnamon!. spray a pan with pam and coat bread with batter, then coat bread with chopped pecans or walnuts!.!. add to pan, flip once when bottom of bread turns golden brown, while the rest of the bread is cooking add some banana slices to the top of the toast!. remove from pan, top with cool whip, aple sauce or syrup!.

serve with juice, turkey bacon, and potatoes:

Microwave 4 potatoes untill soft, chop potatoes into cubes, in a pot, add about an inch of oil!. add potatoes to oil!. cover and cook 15 minutes, stirring occasionally!. add salt and pepper!. top with ketchup, if desiredWww@FoodAQ@Com

I do similarly to munky dust - I use several types of non salted, or sugared mueslie which have a high oat content and mix with sunflower seeds, linseed seed, pumpkin seed and dried fruits of several types!. I make up a big bowl full and so does my husband!. He has his with cold milk andI have mine with really hot water!. It is wonderful and gives slow release energy throughout the morning!.
