I believe that Sushi rice is just short grain glutinous rice, and they add a touch of Sugar and Salt, Mirin and Rice Wine Vinegar!.
If you're having trouble cutting the rolls its because the rice is sticking to the knife blade!. Try dipping the tip of the knife in water and let it run down the blade!. That should keep the rice from sticking!. If you watch the sushi chefs, they do that for almost every cut!.Www@FoodAQ@Com

So you are Asian and asking us how to make good sushi!? wow!. sticky rice is pretty simple!. It's sticky when its cooked!. You don't have to do anything special to it!. Then take some seaweed leaves and put about a tablespoon full in each and roll like a cigar or tortilla!.Www@FoodAQ@Com
