Answers:
I can and will tell you the difference, but considering your reference to a diet--I think it means white potatoes as opposed to sweet potatoes!. Sweet potatoes ok, white not!.
A friend told me one time that he was not allowed white potatoes when his kidneys were not working!. I think it had to do with the potassium in them!.
Now the difference in white and red potatoes--very little, just the skin color!. Russets, dryer good for baking!.
Yucon gold or _______Rose are very gold colored inside and tend to be a little slick if mashed!.
