No you dont have to add cream of tartar!.

No you don't need Cream of Tarter!. I use just egg whites, caster sugar and 1 tsp vinegar (any type although I prefer white)!. You can add flavourings or colours after you have whsked the egg whites until stiff and added the sugar!. Just very gently fold a few drops into the mixture at the end with a metal spoon!.
I sometimes drizzles melted chocolate through and gently fold in to make a swirled effect!.Www@FoodAQ@Com

The cream of Tartar is used to stabilize the egg whites, you don't have to use it, but you get a better product if you do!.Www@FoodAQ@Com

Aren't meringues just egg whites and sugar (and vinegar if you want them soft in the middle)!? I imagine a drop or two of food colouring won't hurt!.Www@FoodAQ@Com
